- Sesame seeds – 215 Gram
- Jaggery – 200 Gram
- Ghee – 1 tbsp
- Water – 2 tbsp
- Cardamom Powder
- Baking Soda – 2 pinch
Instructions
- To make the perfect Til Gud Laddoo, begin by placing a pan on a low flame. Add 215 grams of sesame seeds (til) and roast them gently, stirring continuously. Roast until the sesame seeds turn aromatic and slightly golden, ensuring they don’t burn.
- Once roasted, turn off the flame and transfer the sesame seeds to a plate. Allow them to cool while you prepare the jaggery syrup.
- Next, place a kadhai on medium flame and add 1 tablespoon of ghee. Let the ghee melt completely before proceeding.
- Add 200 grams of crushed jaggery to the kadhai along with 2 tablespoons of water. Stir the mixture well until the jaggery melts into a smooth syrup.
- To check if the syrup is ready, drop a few drops of the melted jaggery into a bowl of cold water. If the drops harden instantly and form a firm ball, the syrup has reached the perfect consistency.
- Once the syrup is ready, add two pinches of baking soda and mix it quickly. The baking soda helps create a light and airy texture in the laddoos.
- Immediately add the roasted sesame seeds to the syrup and mix everything thoroughly. Ensure all the seeds are evenly coated with the jaggery mixture. Cook for a minute or two until the mixture starts to leave the sides of the pan.
- Transfer small portions of the hot mixture onto a greased plate. Work quickly, as the mixture hardens as it cools.
- Grease your palms with a little ghee and roll each portion into small, round laddoos while it is still warm. Be careful, as the mixture may be hot.
