Materials
- Black chickpeas – 1 cup/250 gram
- Bay Leaf – 1
- Salt – 1/2 tsp
- Ghee – 1/2 tsp
- Ginger – 1 inch
- Chopped Green Chili – 2
- Red Chili Powder – 2 tsp
- Cumin Powder – 1 tsp
- Turmeric Powder – 1/2 tsp
- Coriander Powder – 3 tsp
- Black Pepper Powder – 1/2 tsp
- Black Salt – 1/2 tsp
- Dry Mango Powder – 2 tsp
- Roasted Kasoori Methi – 1 tsp
- Boiled black chickpeas – 1 tbsp
- Chopped Coriander
- Black Chickpeas leftover water – 3 to 4 tbsp
- Ghee – 2 tbsp
- Cumin Seed – 1 tsp
- Asafoetida – 1/2 tsp
- Salt as per Taste
- Garam Masala – 1/2 tsp
- Finely Chopped Coriander
- Ghee – 1 tsp
- Slited Green Chilli
Instructions
- To make the amazing Sukha Kala Chana, take 1 cup of Black Chickpea and soak it into water overnight.
- Next step – place a cooker on flame, add soaked Black chickpea, 3-4 cups of water, one bay leaf, 1/2 tsp of salt, and 1/2 tsp of ghee.
- Next step – cover the lid and cook for two whistle on medium flame.
- After two whistle, cook the Black chickpea for 10 minutes on low flame.
- After 10 minutes, turn off the flame and let the pressure release completely.
- Next step – take a grinding jar, add 1 inch ginger, 2 chopped green chilli, 2 tsp of red chilli powder, 1 tsp of cumin powder, 1/2 tsp of turmeric powder, 3 tsp of coriander powder, 1/2 tsp of pepper powder, 1/2 tsp of black salt, 2 tsp of dry mango powder, 1 tsp of roasted Kasoori Methi powder.
- Next step – add 1 tbsp of boiled chickpea, chopped coriander, and 3-4 tbsp of black chickpea leftover water.
- Next step – grind everything well and make a coarse paste.
- Next step – place a Kadhai on flame, add 2 tbsp of ghee and heat well.
- After the ghee melts, add 1/2 tsp of cumin seeds, 1/2 tsp of asafoetida, prepared Masala, 2 tbsp of water and roast well on low flame.
- After the Masala releases the ghee, add boiled Black chickpea, salt as per taste, mix and well.
- Next step – add 1/2 tsp of garam Masala, chopped coriander and mix well.
- Next step – add 1 tsp of ghee, splited green chilli and mix well.
- Next step – turn off the flame and garnish with chopped coriander.
