What is Sambhar Vadi and Its History?
Sambarvadi, also Known as Pudachi Vadi, is a very famous Maharastra Snack. It is prevalent in the Vidarbha region; Here, it is also known as Sambarvad.
This snack you can prepare in two different versions and the first version is Sweet version and Second is spicy Version this Version is very famous in Kolhapur Region.
Sambarvadi made with the stuffing of dried grated coconut, coriander, chilli powder, and Indian spices and filled with an outer covering of Gram flour.

Materials
Ingredients For Dough:
- 2 cups Gram Flour / Besan
- 1 cup All-Purpose Flour / Maida
- Salt as per taste
- 1/2 tsp Red Chilli Powder
- 1/2 tsp Carom seeds /Ajwain
- 2 tbsp Hot Oil
- Water (as required)
Ingredients For Stuffing:
- 200 gms Coriander leaves (washed & chopped)
- 1/2 tsp cumin seeds/Jeera
- Ginger-garlic-Green Chilli paste
- 1 tbsp Poppy seeds
- 2 tbsp Safed Til/Sesame Seeds
- 1/2 cup Desiccated Coconut/Dry Coconut (grated
- 1 tsp Coriander powder
- 1 tsp Red chilli powder
- 1/2 tsp Garam masala powder
- 1/2 tsp Jeera powder
- 1/4 tsp Turmeric powder
- 1/2 tsp Dry Mango/ Amchur Powder
- 1 tsp Sugar
- 3 tbsp Roasted Peanut powder
- Salt as per taste
- Chopped coriander
Instructions
- To Make Traditional Sambar Vadi, first 2 cups of Besan/Gram Flour and 1 cup of Maida/All-purpose flour, and you can also change the ratio vice versa.
- Now, take a wide bowl and add 2 cups of gram flour and 1 cup of all-purpose flour to it.
- Now add salt as per taste, 1/2 tsp of red chilli powder, 1/4 tsp of turmeric powder, 1/2 tsp of carom seeds, and 2 tbsp of Hot oil.
- Now, mix everything well with the help of a spoon.
- Now mix everything well with your hands and see if it holds shape or not, then add a little hot oil.
- Now add water little by little and knead well and make a medium-hard dough and keep in mind that dough should not be soft, and it may have cracks.
- grease the dough with oil and cover it, and let it rest for 10 minutes.
- Now, we will prepare Stuffing for our sambar Vadi and for this, take 200 grams of clean and dry coriander leaves.
- Now chop the dried coriander leaves finely and keep them aside.
- Now, place a pan on medium flame and heat on medium flame and add 1 tbsp of oil and heat well.
- After the oil is hot, add 1/2 tsp of cumin seeds, ginger-garlic-green chilli paste, 1 tbsp of poppy seeds, 2 tbsp of sesame seeds and mix everything well and roast little.
- Now add 1/2 cup of dedicated coconut and mix well and roast for 2 minutes.
- After 2 minutes, add 1 tsp of coriander powder,1 tsp of red chilli powder, 1/2 tsp of garam masala, 1/2 tsp of cumin powder, 1/4 tsp of turmeric powder and 1/2 tsp of dry mango powder and mix everything well.
- Now add 1 tsp of sugar(optional) and mix well.
- Now add 3 tbsp of roasted peanut powder and coarse peanuts and mix everything well.
- Now add salt as per taste and mix well.
- Now add chopped coriander and mix well on low flame and cook 1-1.5 minutes.
- Now, check the dough and knead it again.
- Now, take a small size dough and smoothen it out.
- Now roll it into a cylindrical shape like puri.
- Now add 1 tbsp of stuffing at the centre of the puri.
- Now, apply water on the edges of the puri.
- Fold from one side then the other and press on edges.
- Now fold it again to another two sides and press on edges.
- Now, prepare this type of Sambar Vadi from all dough and Stuffing.
- Now, place the pan on medium flame and oil for dry and heat well.
- After the oil is hot, add prepared sambar Vadi into oil and fry until golden fry on low, medium flame.
- After sambar Vadi turns golden, transfer them into a plate and fry the next batch.
- Now, We will make Street style Instant Kadi and for this, take 1/2 cup of curd.
- Now into curd, add 2-3 tbsp of water, salt as per taste, 1/4 tsp of red chilli powder, 1/2 tsp roasted cumin powder, 1/4 tsp of salt and mix well.
- To prepare Tadka, place a Tadka pan on low flame and add 1 tsp of oil to it and heat.
- After the oil is hot, add 1/2 tsp of cumin, 1/2 tsp of mustard seeds, one pinch of asafoetida, 3-4 chopped garlic cloves, four chopped green chillies, two pinches of turmeric powder, and mix well.
- Now add some curry leaves and slit green chilli and turn off the flame.
- Now add prepared Tadka to the Kadi.
- Now your Crispy and testy Sambar Vadi and Street style Kadi is ready, and you can enjoy it.
