Materials
- White Peas – 1.5 cup
- Potato – 2
- Water – 2 cup
- Salt as per Taste
- Turmeric Powder – 1/4 tsp
- Bay Leaf – 1
- Oil – 1 tbsp
- Cumin Seed – 1 tsp
- Chopped Green Chilli – 1 tsp
- Ginger Asafoetida – 2 pinch
- Turmeric Powder – 1/4 tsp
- Coriander Powder – 2 tsp
- Red Chili Powder – 1 tsp
- Cumin Powder – 1/2 tsp
- Coriander
- Boiled Potato
- Cumin
- Salt
- Ginger
- Green Chilli
- Chopped Coriander
- Poha Powder – 2 tbsp
Mithi Chutney Recipe
- Imly – 3 tbsp
- Crushed Jaggery – 4 tbsp
- Water – 3/4 cup
- Black Salt – 1/4 tsp
- Salt
- Red Chili Powder
- Cumin Powder Jeera
- Garam Masala – 1/4 tsp
Ingredients of Green Chutney Recipe
- Coriander
- Mint Leaves/Pudina
- Green Chilli – 3 to 4
- Ginger – 1 inch
- Salt as per Taste
- Black Salt – 1/4 tsp
- Asafoetida – 2 pinch
- Lemon Juice
- Ice Cube – 1
Instructions
- Take 1.5 cups of dried white peas, rinse them thoroughly, and soak them in water overnight to soften.
- The next day, transfer the soaked white peas to a pressure cooker. Add enough water to cover the peas by about an inch.
- Add salt to taste, 1 teaspoon of cumin powder, 1 tablespoon of coriander powder, 1 teaspoon of turmeric powder, and 1 chopped potato.
- Close the lid and cook on high flame until the first whistle. Then, lower the heat and cook for another 3-4 whistles.
- Once done, turn off the flame and let the pressure release naturally. Open the lid and check if the peas are soft. Mash some of the peas gently to thicken the ragda.
- Add ½ teaspoon of garam masala, black salt, julienned ginger, and chopped green chilies to the ragda. Mix well and let it simmer for a few minutes.
- For the pattice, take 4 boiled potatoes and crush them well with your hands to make a smooth mixture.
- Add ½ teaspoon of cumin seeds, salt to taste, finely chopped ginger, chopped green chilies, chopped coriander leaves, ¼ teaspoon of turmeric powder, and 2 tablespoons of poha powder. Mix well until evenly combined.
- Shape the mixture into medium-sized patties and set them aside.
- Heat a pan and add oil for shallow frying. Once the oil is hot, carefully place the pattice in the pan and fry on medium heat until golden brown and crispy. Flip them gently to ensure even cooking.
- Once done, transfer the fried pattice to a plate and repeat the process for the remaining batch.
- To assemble the Ragda Pattice Chaat, place the crispy pattice on a serving plate and pour a generous amount of hot ragda over them.
- Drizzle with green chutney and red chutney for extra flavor.

- To make the green chutney, take a grinding jar, add a handful of coriander, mint leaves, 3-4 green chilies, 1 inch of ginger, salt as per taste, 1/4 tsp of black salt, and 2 pinches of asafoetida.
- Now add lemon juice and one ice cube, and make a fine paste.
- Transfer the green chutney into a bowl, and your perfect green chutney is completely ready.
Tamarind Chutney Recipe
- To make the perfect tamarind chutney, take a wide pan and add 3 tbsp of seedless tamarind, 4 tbsp of jaggery, and 3/4 cup of water.
- Now place the pan on the flame and cook until the chutney turns thick.
- After the chutney turns thick, turn off the flame and filter it with the help of a strainer.
- Now add 1/4 tsp of black salt, salt as per taste, red chili powder, 1/2 tsp of cumin powder, and 1/4 tsp of garam masala, and mix everything well.
- Now your perfect tamarind chutney is also ready.
