Materials
For Pitor
- Gram flour – 1 bowl
- Fresh curd – 1/2 bowl
- Water – 2 bowl
- Salt – 1 tsp
- Turmeric powder – 1 tsp
- Kashmiri red chilli powder – 1 tsp
- Cumin seeds – 1 tsp
- Carom seeds – 1 tsp
For Kadhi
- Coriander seeds – 1 tbsp
- Fennel seeds – 1 tsp
- Clove – 1
- Peppercorns – 10-12
- Dry red chilli – 1
- Cumin seeds – 1/2 tsp
- Ghee – 1 tsp
- Mustard seeds – 1 tsp
- Carom seeds
- Chopped ginger
- Chopped green chilli
- Salt as per taste
- Turmeric powder – 1 tsp
- Red chilli powder – 1 tsp
- Coriander powder – 1 tsp
- Curd – 1 bowl
- Water as required
- Gram flour – 3 tbsp
- Chopped coriander
Instructions
- To make the amazing Pitor Sabji, take a bowl, add one bowl of Gram flour, 1/2 bowl of fresh curd & 1 bowl of water.
- Next step – add 1 tsp of salt, 1 tsp of turmeric powder, 1 tsp of Kashmiri red chilli powder, 1 tsp of cumin seeds, and one tsp of carom seeds and mix everything well.
- Next step – add a bowl of water again, mix well and prepare a thin batter.
- Next step – place a pan on flame, add prepared batter, and cook on low flame(stir continuously).
- After the mix leaves the pan, turn off the flame and transfer the mixture to a greased plate and spared into a thin layer.
- Next step – keep it aside and let it set for 30 minutes.
- Next step – place a pan on flame, add 1 tbsp of coriander seeds, 1 tsp of fennel seeds, 1 clove, 10-12 peppercorns, one dry red chilli, 1/2 tsp of cumin seeds, and roast a little.
- After roasting a little, transfer the masala into a crusher and make a coarse powder.
- Next step – place a pan on flame, add 1 tbsp of ghee, and heat well.
- Next step – add two dry red chilies, and roast a little.
- Next step – add 1 tsp of mustard seeds, carom seeds, 2 tsp of prepared masala, and 1 tsp of asafoetida and mix well.
- Next step – add chopped ginger, chopped green chilli, salt per taste, 1 tsp of turmeric powder, 1 tsp of red chilli powder, 1 tsp of coriander powder, little water and mix everything well.
- Next step – take a bowl of curd, add water as required, 3 tbsp of gram flour, and mix well.
- Next step – add curd mix into the pan, stir continuously, and cook for 5 minutes.
- Next step – check the Pitor and cut it into small Katli pieces.
- After cooking Kadhi for 5 minutes, add the Pitor pieces and gently rotate the pan.
- Next step – add chopped coriander, sprinkle prepared masala, and gently mix.
- After 2 minutes, turn off the flame and serve your Pitor Sabji.
- Now your perfect Pitor Sabji is completely ready, and you can enjoy it with steamed rice, Fulke, or Paratha.
