- Green Gram (Moong) – 1/2 cup
- Semolina – 1/4 cup
- Nigella /Mangrella – 1/2 tsp
- Carom Seed – 1/2 tsp
- Cumin seeds – 1/2 tsp
- Asafoetida – 2 pinch
- Salt as per Taste
- Turmeric Haldi – 1/4 tsp
- Kasoori Methi – 1/2 tsp
- Aamchoor Powder – 1/2 tsp
- Baking Soda -1/4 tsp
- Ghee – 1 tbsp
- Wheat Flour – 1 cup
- Ghee – 1 tbsp

- Oil for frying
Instructions
- To make the most tasty moong dal atta Mathri, take 1/2 cup of moong dal, wash well, and soak it for 2 hours.
- After two hours, drain the excess water, add it to a grinding jar, and make a coarse paste.
- Now transfer the paste onto a wide plate and add 1/4 cup of fine semolina, 1/2 teaspoon of mangrella, 1/2 teaspoon of carom seeds, 1/2 teaspoon of cumin seeds, 2 pinches of asafoetida, and salt as per taste.
- Now add 1/4 teaspoon of turmeric powder, 1/2 teaspoon of Kasoori methi, 1/2 teaspoon of dry mango powder, and 2 teaspoons of baking soda.
- Now add 1 tablespoon of ghee and mix everything well.
- Now add 1 cup of wheat flour and mix well.
- Now take a bowl, add 1 tablespoon of ghee and 1/2 tablespoon of wheat flour, and mix well.
- After 10 minutes, check the dough and knead again.
- Now take the medium-sized dough and roll it.
- Now apply the prepared paste to it.
- Now prepare the roll with the roti.
- Now cut the roll into small pieces and gently flatten it with the help of a roller pin.
