Materials
For Dough
- 2 cups All-Purpose Flour
- 1/2 cup Ghee
- 1 pinch Salt
- Water as required
For Stuffing
- 1/2 tsp Ghee
- 2 tbsp Chopped Almonds
- 2 tbsp Chopped Cashewnut
- 1 tbsp Chopped Pista
- 3 tbsp Desiccated Coconut
- 1 tbsp Raisins
- 200 gram Mawa
- Saffron Strands
- 1/2 tsp Cardamom Powder
- 5 tsp Sugar Powder
For Sugar Syrup
- 300 gram Sugar
- 3/4 cup Water
- Saffron Strands
Instructions
Dough Preparation
- First, take a bowl and add 2 cups of all-purpose flour, 1 pinch of salt, and mix well.
- Now add 1/4 cup of Ghee and mix well.
- Now, little by little, add water and prepare a semi-soft dough.
- Now cover it with a wet cloth and let it rest for 20 minutes.
Stuffing Preparation
- Now, place a pan on flame, grease the pan with Ghee and heat well.
- Now add 2 tbsp of chopped almonds, 2 tbsp of chopped cashew, 1 tbsp of chopped pistachio and roast a little on low flame.
- Now add 3 tbsp of desiccated coconut, 1 tbsp of raisins, mix and roast.
- After all dry fruits turn a little golden, transfer them to a plate and let them cool.
- Now add 200 grams of Mawa into the pan and roast it on low flame.
- After Mawa turns thick & leaves the pan, transfer it to a bowl and let it cool.
- Now into Mawa, add all roasted dry fruits, some saffron strands, 1/2 tsp of cardamom powder, and 5 tbsp of sugar powder.
- Now mix everything well, and the filling is ready.
Sugar Syrup/Chaasni Preparation
- Now, place a pan on flame and grease the pan with Ghee and heat.
- Now add 300 grams of sugar and 250 ml of water and melt the sugar on a high flame.
- After some seconds, add some Saffron strands, 1/4 tsp of cardamom powder, and melt until the sugar syrup turns sticky.
- Now, check sugar syrup with your fingers; if it feels sticky, this means sugar syrup is ready and turn off the flame.
Gujiya Preparation
- Now, check the dough and knead well one more time.
- Now, take small pieces of the dough and prepare small balls like the following images.
- Now, take a small ball and roll it like Puri but a little bit thicker than Puri.
- Now cut it with a round bowl so all Gujiya will be the same size.
- Now, apply water on the edges and add 1.5 tbsp of filling.
- Now fold the Gujiya, press and close on all sides, and give design on edges.
- To make the design on the edges, you can also use Gujiya mould, Fork, or Gujiya cutter to make a design on the edges.
- Now, one by one, prepare the Gujiya with the remaining dough and stuffing and keep them covered in a wet cloth.
- Now, place a pan on flame, add oil for deep frying and heat on low flame.
- Now, one by one, add Gujiya in the oil and fry on low flame in medium hot oil until golden.
- After Gujiya turns golden & crispy, transfer them into the hot sugar syrup.
- Now dip the fried Gujiya into sugar syrup for 2 to 3 minutes.
- When you fry the second batch of Gujiya, check that the oil is not too hot.
- After 2 minutes, transfer the Gujiya into a plate.
- Now your perfect Market Style Ras Wali Mawa Gujiya are completely ready, and you can enjoy them.
