Materials
- Jackfruit
- Mustard Oil – 3 tbsp
- Turmeric – 1 tsp
- Salt
- Bay Leaf – 2 pcs
- Black Cardamom – 2 pcs
- Cinnamon – 1 stick
- Black Pepper – 6 pcs
- Clove – 2 pcs
- Dry Red Chilli – 2 pcs
- Cumin – 1 tsp
- Garlic – 7 cloves
- Onion – 3 pcs
- Ginger – 1 inch
- Green Chilli – 3 pcs
- Turmeric – 1/2 tsp
- Cumin Powder – 1/2 tsp
- Red Chilli Powder – 1 tsp
- Coriander Powder – 2 tsp
- Tomato – 2 pcs
- Salt as per Taste
- Water – 1.5 cup
- MAGGI Masala-ae-Magic – 1 sachet
- Chopped Coriander
Instructions
- Chop the jackfruit into medium-sized pieces; grease your knife and hands to avoid the sticky sap.
- Heat 3 tbsp mustard oil in a pressure cooker until it starts smoking slightly.
- Add the jackfruit pieces, 1 tsp turmeric powder, and a pinch of salt; sauté for 6–8 minutes until light pink.
- Remove the jackfruit and keep it aside on a plate.
- In the same cooker, add 2 bay leaves, 2 black cardamoms, 2 green cardamoms, 5–6 peppercorns, 1 cinnamon stick, 2 dry red chilies, 1 tsp cumin seeds, and 6–7 garlic cloves. Roast for 30 seconds.
- Add 2–3 chopped onions and sauté until golden brown.
- Add 1-inch chopped ginger and 3 chopped green chilies, roast for another 1–2 minutes.
- Now add 1/2 tsp turmeric, 1/2 tsp cumin powder, 1 tsp red chili powder, and 2 tsp coriander powder; mix and cook for a minute.
- Add 2 chopped tomatoes and salt to taste; cook until tomatoes turn soft.
- Pour in ½ cup of water, close the lid, and pressure cook for 2 whistles.
- Let the pressure release, open the lid and mash the cooked masala gently with the back of a spoon.
- Add the roasted jackfruit pieces to the masala and mix well.
- Add 1½ cups of water, close the lid again, and cook for 2–3 whistles.
- Once done, release the pressure, open the lid, and give everything a good mix.
- Finally, add 1 packet of Maggi Masala, mix well, simmer for 1 minute, and your spicy Masala Kathal is ready to serve!
