Materials
- Kabuli Chana – 400 gm
- Tea – 2 tsp
- Bay Leaf – 1
- Black Cardamom – 2 pcs
- Cinnamon Cardamom – 2 pcs
- Clove -4 pcs
- Black Pepper – 5 pcs
- Salt as per Taste
- Turmeric – 1/4 tsp
- Baking Soda – 1/4 tsp
- Tomato – 2 pcs
- Ginger – 1 inch
- Coriander Green Chilli – 3 pcs
- Oil – 3 tbsp
- Cumin – 1 tsp
- Asafoetida – 1/2 tsp
- Red Chilli Powder – 2 tsp
- Coriander Powder – 1 tbsp
- Salt – 1 tsp
- Black Pepper Powder – 1/2 tsp
- Amchoor Powder – 1 tsp
- Chole Masala – 2 tsp
- Garam Masala – 1/2 tsp
- Turmeric – 1/2 tsp
- Black Salt – 1/2 tsp
- Ghee – 1 tbsp
- Cumin Asafoetida – 1 pinch
- Kashmir Red Chilli Powder – 1/2 tsp
- Split Green Chilli – 2 to 3 pcs
- Ginger Julians
- Kasuri Methi – 1 tbsp
- Coriander Leaves
Instructions
- To make the perfect Masala Chole, take 400 grams of Kabuli Chana and soak it for 8 hours.
- Place a cooker on the flame, add 2 cups of water, and boil well.
- After boiling the water, add 2 tsp. of chai patti and cook well.
- After the boil, turn off the flame and filter the water.
- Again, place the cooker on the flame, add soaked chole, 1 bay leaf, 2 cloves of cardamom, a cinnamon stick, 2 cardamoms, 4 cloves, 5 peppercorns, and prepared tea water.
- Now add salt as per taste, 1/4 tsp of turmeric powder, and 1/4 tsp of baking soda, and cook on high flame.
- After one whistle, turn the flame to low and cook until four whistles.
- After 4-5 whistles, turn off the flame and let it cool.
- Now take a grinding jar, add 2 chopped tomatoes, 1 inch of ginger, coriander leaves, and 3–4 green chilies, and make a fine paste.
- Now open the cooker and remove all the masala from it.
- Now place a pan on the flame, add 3 tablespoons of oil, and heat well.
- After the oil is hot, add 1 teaspoon of cumin seeds, and 1/2 teaspoon of asafoetida, and roast a little.
- Now add the prepared tomato paste and cook well.
- Now take a small bowl, add 2 tsp of red chili powder, 1 tbsp of coriander powder, 1 tsp of salt, 1/2 tsp of pepper powder, 1/2 tsp of dry mango powder, 1/2 tsp of garam masala, 1/2 tsp of turmeric powder, 1/2 tsp of black salt, a little water, and mix well.
- Now add the prepared masala mix to the pan and cook well.
- Now add one ladle full of chole into the pan and mash them.
- Now add the remaining chole, mix, and cook well for 5 minutes.
- Now place a small pan on the flame, add 1 tablespoon of ghee, and heat well.
- After the ghee is hot, add cumin seeds, asafoetida, red chili powder, split green chilies, ginger julienne, and kasuri methi and mix well.
- Now add the prepared tempering to the chole and mix well.
- Now turn off the flame and garnish it with chopped coriander.
- Now your perfect Masala Chole is completely ready, and you can enjoy it.

Masala Chole Recipe – Step By Step
1: To make the perfect Masala Chole, take 400 grams of Kabuli Chana and soak it for 8 hours.

14: Now take a small bowl, add 2 tsp of red chili powder, 1 tbsp of coriander powder, 1 tsp of salt, 1/2 tsp of pepper powder, 1/2 tsp of dry mango powder, 1/2 tsp of garam masala, 1/2 tsp of turmeric powder, 1/2 tsp of black salt, a little water, and mix well.
15: Now add the prepared masala mix to the pan and cook well.
16: Now add one ladle full of chole into the pan and mash them.
17: Now add the remaining chole, mix, and cook well for 5 minutes.
18: Now place a small pan on the flame, add 1 tablespoon of ghee, and heat well.
19: After the ghee is hot, add cumin seeds, asafoetida, red chili powder, split green chilies, ginger julienne, and kasuri methi and mix well.
20: Now add the prepared tempering to the chole and mix well.
21: Now turn off the flame and garnish it with chopped coriander.
22: Now your perfect Masala Chole is completely ready, and you can enjoy it.
