- Saffron Strands
- Water
- Curd – 500 gm
- Sugar – 6 tbsp
- Cardamom Powder

- Make the Mango Pulp – Wash 3 ripe mangoes thoroughly, peel them, and scoop out the pulp. Transfer the pulp to a grinding jar and blend until smooth and creamy.
- Prepare the Saffron Water – Take a few strands of saffron, add a little warm water, and gently crush them to release their color and aroma. Set aside.
- Whisk the Curd – In a clay pot or a large mixing bowl, add 500 grams of fresh curd. Add 6 tablespoons of sugar and a pinch of cardamom powder. Whisk it all together using a traditional mathani or hand whisk until the curd turns smooth and fluffy.
- Reserve a Portion – Take out a small portion of the whisked curd and keep it aside in a separate bowl. This will be used later while layering the lassi.
- Mix the Lassi – Add the mango pulp and saffron water into the remaining whisked curd. Mix everything well until the mango lassi is beautifully golden and smooth.
- Chill the Lassi – Place the prepared mango lassi in the refrigerator for at least 30 minutes to chill.
