Materials
- Wheat Flour – 1 cup
- All Purpose Flour – 1 cup
- Salt as per Taste
- Black Pepper Powder – 1/2 tsp
- Oil – 1 tbsp
- All Purpose Flour – 2 tbsp
- Ghee – 1 tbsp
- Oil for Fry
- Red Chilli Powder
- Black Pepper Powder
- Chaat Masala
- Black Salt
- Mint Powder
Instructions
- In a wide mixing bowl, combine 1 cup wheat flour and 1 cup all-purpose flour.
- Add salt to taste, 1/2 tsp black pepper powder, ½ tsp red chili powder, 1 tsp carom seeds, and 1 tbsp oil. Mix well.
- Gradually add water and knead into a medium-soft dough. Cover and let it rest for 5 minutes.
- In a separate bowl, mix red chili powder, black pepper powder, 1 tsp chaat masala, and 1 tsp black salt. Divide this spice mix into two portions.
- To one portion, add 1 tsp mint powder and mix well to create a spiced slurry.
- In another bowl, mix 2 tbsp gram flour and 1 tbsp ghee to form a paste.
- Take a small portion of the dough and roll it out thinly.
- Apply a thin layer of the prepared spiced slurry, then fold the rolled dough layer by layer (as shown in the image).
- Seal the edges by applying water, then press lightly to secure.
- Cut the folded dough into small mathri pieces.
- Heat oil in a kadhai for deep frying.
- Once the oil is hot, add the mathris in batches and fry on medium heat until golden brown and crispy.
- Remove the fried mathris onto a plate lined with paper towels to drain excess oil.
