Materials
- Bottle Gourd – 1
- Chopped Green Chili
- Chopped Ginger
- Red Chilli Powder – 1 tsp
- Turmeric Powder – 1/4 tsp
- Coriander Powder – 1 tsp
- Garam Masala – 1/2 tsp
- Paneer – 200gm
- Chopped Coriander
- Besan/Gram Flour- 4 to 5 tbsp
- Salt as per taste
- Chopped Almonds
- Chopped Cashew Oil – 1 tbsp
- Bay Leaf/ Tej Patta -1
- Red Chili Lal Mirch-2
- Cinnamon/Cassia
- Bark Dalachini-1 Stick
- Clove/Laung – 3
- Cardamom – 3 to 4
- Cumin Jira- 1 tsp
- Chopped Onion -2
- Garlic – 5 to 6 cloves
- Chopped Tomato-2
- Ginger – 1/2 inch
- Kaju – 2 tbsp
- Kashmiri Red Chilli Powder- 1 tsp
- Turmeric Powder – 1/4 tsp
- Coriander Powder – 1 tsp
- Sugar – 1/2 tbsp
- Butter – 1 tbsp
- Garam Masala – 1/2 tbsp
- Kasuri Methi – 1 tbsp
- Chopped Coriander
- Cream
- Rogan
Instructions
- To make the most tasty and perfect Lauki Malai Kofta, take one bottle of gourd, peel it, and grate it with the help of a medium-sized grater.
- Now squeeze the water from the Lauki and keep it aside.
- Now add chopped green chilies, grated ginger, 1 tsp of red chili powder, 1/4 tsp. of turmeric powder, 1 tsp of coriander powder, and 1/2 tsp. of garam masala.
- Now add 1/2 cup of grated cheese, chopped coriander, and gram flour (5 tbsp) as required and mix well.
- Now add salt as per taste and mix everything well.
- Now prepare a small kofta with the prepared mix (you can also fill it with chopped cashews and raisins).
- Now add the prepared kofta to medium-hot oil and fry well until golden and crispy.
- After the kofta turns golden and crispy, transfer the kofta to a plate and fry the next batch.
- Now place a kadhai on the flame, add one tablespoon of oil, and heat well.
- After the oil is hot, add one bay leaf, two dry red chilies, three cloves, 2-3 cloves, 3-4 green cardamoms, and 1 tsp of cumin seeds, and roast a little.
- After a few seconds, add two chopped onions, dry red chilies, and 5–6 garlic cloves and roast for a minute.
- After one minute, add chopped tomatoes and 1/2 inch of ginger and cook well.
- After cooking for some time, add two tablespoons of cashew and roast well.
- Now add 1 tsp of salt, 1 tsp of Kashmiri red chili powder, 1/4 tsp of turmeric powder, and 1/2 cup of water, and mix well.
- Now close the lid and cook for 5–6 minutes.
- After 5–6 minutes, remove the lid, remove the bay leaf from the gravy, and let it cool.
- Now transfer the gravy mix into a grinding jar and make a fine paste.
- Now take a small bowl and add 1 tsp of Kashmiri red chili powder, 1/4 tsp of turmeric powder, 1 tsp of coriander powder, and 1/2 tsp of sugar.
- Now add water and make a fine paste.
- Now place a pan on the flame, add one tablespoon of butter, and melt it.
- Now add the prepared masala paste and cook on a low flame.
- After some time, add the prepared gravy paste and cook until it releases the oil.
- After the gravy releases the oil, add the saved Lauki water, 1/2 tsp of garam masala, 1 tsp of Kasoori methi, and chopped coriander.
- Now garnish it with cream and place the prepared kofta into it.
- Now your perfect Lauki Malai Kofta is completely ready, and you can enjoy it.
