Instant Milk Cake Recipe – Step By Step

Step 1: Place a heavy-bottomed pan or kadhai on the stove and turn the heat to low. Add ½ cup of sugar to the pan and spread it evenly. Do not stir it initially—let it melt on its own.
Step 2: Once the sugar starts melting and turning light golden, gently stir it using a spatula. Keep stirring until fully melted. Do not overheat or let it turn too dark, or it will taste burnt.
Step 3: As soon as it turns golden, turn off the gas immediately and continue stirring (as the pan remains hot). Now slowly and carefully add 1 cup of milk to it. The sugar may look like it’s clumping or curdling the milk—this is exactly what we want.
Step 4: Keep stirring the milk and caramel mixture until it is well combined. The milk should curdle slightly, giving a light grainy texture—this is perfect for milk cake.
Step 5: Now add ½ cup of milk powder gradually while stirring. Ensure the gas is still off at this stage. Mix until smooth. You’ll notice the mixture getting thick and creamy.
Step 6: Turn the gas back on at a low flame. Stir the mixture for a minute to warm it up. Now add grated paneer or block cheese (around 1 cup / 200g). Stir continuously to combine.
Step 7: Continue cooking on low flame until the mixture starts to leave the sides of the pan and holds together like a dough. The mixture will now start to resemble the texture of traditional milk cake.
Step 8: Add cardamom powder and mix well. Stir until everything is well combined, and the mixture becomes thick and grainy but soft.
Step 9: Turn off the heat. Pour the mixture into a greased tray or plate. Flatten and level it with a spatula.
Step 10: Let it set for 1–2 hours. Once set, cut it into rectangular or square pieces—just like you get in sweet shops.
Step 11: Garnish with chopped pistachios for extra flavor and a festive look. Your instant milk cake is ready to enjoy!
