Ingredients of Imli Ki khatti Mitthi Chutney Recipe

  • Tamarind/Imli – 100 grams
  • Hot Water – 2 cups
  • Oil – 1 tbsp
  • Cumin seeds – 1/2 tsp
  • Asafoetida – 1/4 tsp
  • Jaggery – 100 gms
  • Salt -1 tsp
  • Red Chilli Powder – 1/2 tsp
  • Saut/Dry Ginger Powder – 1/2 tsp
  • Black Salt – 1/2 tsp
  • Pepper Powder – 1/4 tsp
  • Roasted Cumin Powder -1 tsp
  • Sugar – 4 tbsp

Materials

  • 100 grams Tamarind/Imli
  • 2 cup Hot Water
  • 1 tbsp Oil 
  • 1/2 tsp Cumin seeds
  • 1/4 tsp Asafoetida 
  • 100 grams Jaggery 
  • 1 tsp Salt 
  • 1/2 tsp Red Chilli Powder 
  • 1/2 tsp Saut/Dry Ginger Powder
  • 1/2 tsp Black Salt 
  • 1/4 tsp Pepper Powder
  • 1 tsp Roasted Cumin Powder
  • 4 tbsp Sugar 

Instructions

  • To make the perfect Market Style Imli Ki chutney/Tamarind chutney, first take 100 Grams of seedless Imli/Tamarind.
  • Now, take a bowl and add tamarind and 2 cups of hot water.
  • Now, close the lid and soak it in the water for 1/2 hour.
  • After 1/2 Hour, take a grinding jar, add soaked tamarind into it, and make a fine paste.
  • Now, take a bowl and place a strainer on it.
  • Now add tamarind paste into the strainer and strain the entire paste to remove the skin and fiber (Add 2 tbsp of water if required and strain the mix).
  • Now, place a pan on flame, add 1 tbsp of oil, and heat well.
  • After the oil is hot, add 1/2 tsp of cumin seeds, 1/2 tsp of asafoetida, mix well and saute.
  • After some seconds, add tamarind paste, mix well, and boil on a low medium.
  • After tamarind paste starts boiling, add 100 grams of crushed jaggery, mix well and melt the jaggery.
  • After some seconds, add salt as per taste, 1/2 tsp of red chilli powder, 1/2 tsp of dry ginger powder, and mix well.
  • Now add 1/2 tsp black salt,1/4 tsp of pepper powder, 1 tsp of roasted cumin powder, and mix well.
  • Now add 4 tbsp of sugar to balance the taste, mix well, and boil for 2 to 3 minutes.
  • After chutney starts coating on the spatula, turn off the flame and let it cool.
  • Now your Imli chutney is completely ready, and you can enjoy it or store it in the fridge for two months.
