Materials
- Fox Nuts – 1 cup
- Cashew
- Almonds
- Ghee – 3 tbsp
- Desiccated Coconut – 1 cup
- Musk Melon Seeds – 1/4 cup
- Poppy Seeds – 2 tbsp
- Wheat Flour – 2 cup 200 gm
- Cardamom Powder
- Tagad Bura – 300 gm
Instructions
- Take 1 bowl (approx. 20–25 g) of makhana (fox nuts) and grind it into a coarse powder using a grinding jar.
- Add a small handful of almonds and cashews to the jar and pulse them together with the makhana to make a coarse blend.
- Heat 1 tbsp desi ghee in a heavy pan and roast the makhana-nut powder on low flame till aromatic and slightly golden.
- Add 1 bowl of desiccated coconut (or grated dry coconut) and roast lightly for 30–40 seconds. Transfer everything to a large bowl.
- In the same pan, heat 1 tsp ghee. Add 1/4 cup muskmelon seeds and roast them on low flame till they begin to pop.
- Add 2 tbsp poppy seeds (khus khus) and roast along with melon seeds for a minute. Transfer these to the same bowl.
- Now add 1 tbsp ghee to the pan and roast 2 bowls (approx. 200 g) of wheat flour on low flame till golden brown and fragrant.
- Add a little more ghee while roasting to ensure smooth, even roasting and good binding. Once done, transfer to the same bowl.
- Add 1/2 tsp cardamom powder for flavor and let the mixture cool just enough so it’s warm but touchable.
- Now add 300 g of boora (tagar) or powdered sugar to the warm mixture and mix thoroughly using a spoon first.
- Check binding by pressing a small portion. If too dry, add a spoon of warm ghee.
- Shape the mixture into medium-sized round laddus using your hands. Press gently to form perfect smooth balls.
- Make all laddus and let them cool completely before storing in an airtight box.
- Store at room temperature for up to 1.5–2 months—but they’ll likely finish in a week!
- Enjoy 1–2 laddus daily with milk for boosted immunity, energy, and cooling effects during summer.
