Materials
- Gooseberry – 800 gm
- Fennel Seeds – 3 tbsp
- Coriander – 2 tbsp
- Fenugreek Seeds – 1 tsp
- Cumin – 1 tsp
- Black Pepper
- Yellow Mustard Dal – 4 tbsp
- Kashmiri Red Chilli Powder – 1 tbsp
- Black Salt – 1 tsp
- Salt – 1.5 tbsp
- Asafoetida – 1/2 tsp
- Turmeric – 1 tsp
- Mustard Oil – 200 ml
- Garlic Carom
- Seeds – 1/2 tsp
- Nigella Seeds – 1 tsp
- White Vinegar
Instructions
- To make the perfect gooseberry pickle, 800 grams of gooseberries, wash well and clean with the help of a cloth.
- Now place a pan on the flame, add 3 tbsp of fennel seeds, 2 tbsp of coriander seeds, 1 tsp of fenugreek seeds, 1 tsp of cumin seeds, and peppercorns, and roast everything for some time.
- After roasting, turn off the flame and let everything cool.
- Now add roasted ingredients, 1 tbsp of Kashmiri red chili powder, 1 tbsp of black salt, 1.5 tbsp of 1/2 tsp of asafoetida, and salt into a grinding jar, and make a coarse powder.
- Now place a kadhai on the flame, add 200 ml of mustard oil, and heat on low flame.
- Now add the gooseberries and cook on medium flame.
- After the gooseberries turn soft, turn off the flame and transfer the gooseberries onto a plate.
- Now add garlic pieces into the hot oil and fry for some time.
- Now transfer the garlic pieces to the plate.
- After the oil cools a little, transfer it into a bowl, add prepared masala powder, 1 tsp of nigella seeds, and mix everything well.
- Now add cooked gooseberries and mix well.
- Now add 4 tbsp of white vinegar and mix well.
