- Carrot – 500 gm
- Rice – 4 tbsp
- Water Ghee – 2 tbsp
- Chopped Cashew
- Chopped Almonds
- Chopped Pistachio – 1 tbsp
- Milk – 1 ltr
- Cashew – 8 pcs
- Sugar – 3/4 cup
- Milk – 4 tbsp
- Cardamom Powder
Instructions
- Take 500 grams of fresh carrots, wash them thoroughly, peel them, and cut off both ends.
- Grate the carrots using a medium-sized grater.
- Soak 4 tbsp of rice in water for 15-20 minutes.
- Heat a kadhai (deep pan) on medium flame, add 2 tbsp of ghee, and let it heat well.
- Once the ghee is hot, add chopped dry fruits and roast until golden. Transfer the roasted dry fruits to a plate and set aside.
- Add the grated carrots to the remaining ghee in the kadhai and sauté for 2-3 minutes until fragrant.
- Pour 1 liter of milk into the kadhai with the sautéed carrots and cook, stirring occasionally.
- Take 3 tbsp of the soaked rice, grind it into a coarse paste, and add it to the kheer. Stir well to combine.
- In the same grinding jar, blend the remaining soaked rice, 7-8 soaked cashews, 3/4 cup sugar, and 1 tbsp milk to form a smooth paste.
