Instructions

  • To prepare the delicious Gajar Paak (Carrot Barfi), start by peeling ½ kg of fresh carrots.
  • Chop the carrots into small pieces and finely process them using a chopper.
  • Heat 2 tbsp of ghee in a kadhai over medium flame.
  • Once the ghee melts, add the chopped carrots and sauté them until they soften.
  • Stir in ¾ cup of sugar and cook until the mixture begins to release its natural aroma.
  • In a separate grinding jar, blend ½ cup of dry fruits into a coarse powder.
  • Transfer the dry fruits powder to a plate, and mix it with desiccated coconut, 4 tbsp of milk powder, and ½ tsp of cardamom powder.
  • Once the carrots are tender, pour in 500 ml of milk and bring it to a boil.
  • Add the prepared coconut and dry fruits mixture to the boiling milk-carrot blend, stirring thoroughly.
  • Continue cooking until the mixture thickens and begins to leave the sides of the pan.
  • Turn off the flame and transfer the thickened mixture into a greased tray.
  • Spread it evenly and allow it to set at room temperature for a while.
  • Once set, cut the Gajar Paak into small, bite-sized pieces.
