What is Dabeli and Its History?
Dabeli, Kutch Dabeli or Double roti (Gujarati:દાબેલી,કચ્છી દાબેલી, Devnagari: दाबेली,कच्छी दाबेली) is a mainstream nibble food of India, starting in the Kutch or Kachchh locale of Gujarat.
Dabeli in a real sense signifies “squeezed” in the Gujarati language. The dish is said to have been imagined by Keshavji Gabha Chudasama (otherwise called Kesha Malam), an inhabitant of Mandvi, Kutch, during the 1960s.
Dabeli today is acclaimed in Kutch and Gujarat as well as all through Maharashtra, portions of Telangana, Karnataka, Rajasthan, and numerous different conditions of India. Materials
Ingredients For Dabeli Masala
- 1/2 cup Coriander Seeds
- 1 tbsp Fennel seeds
- 2 inch Cinamon Stick
- 1 tbsp Cumin Seeds
- 1 tsp Black Peppercorns
- 7 Cloves
- 2 Black Cardamom
- 2 Star Anise
- 1 tbsp White Sesame
- 2 Bay Leaf
- 5 Dry Red Chilli
- 4 tbsp Desiccated Coconut
- 4 tbsp Kashmiri Red Chilli Powder
- 1 tbsp Black Salt
- 1 tbsp Dry Mango Powder
- 1 tsp Salt
- 2 tsp Sugar
- 1 tbsp Groundnut Oil
Ingredients For Dabeli Chutney
- 1/4 cup Garlic
- 4 tbsp Kashmiri Red Chilli Powder
- 1/4 cup Roasted Peanuts
- Salt as per taste
- 1 tsp Lemon Juice
- 1 tsp Groundnut Oil
Ingredients For Singdana
- 1/2 cup Roasted Peanuts
- 2-3 tbsp Dabeli Masala
- 1 tsp Add Groundnut Oil
Ingredients For Onion Hari Mirch Mix
- 1 Chopped Onion
- 3 Chopped Green Chilli
- Chopped Coriander
- 1 tsp Lemon Juice
Ingredients For Aalu Masala
- 2 tbsp Oil
- Dabeli Masala
- 5 Boiled & Mashed Aloo
- 1/2 cup Water
- Mithi Chutney
- Salt as per taste
- Desiccated Coconut
- Singdana/Masala Peanuts
- Chopped Coriander
- Onion Mix
- Nylon Sev
- Pomegranate Seeds
- Pav Bread
- Butter For roasting
Instructions
Step – 1 - Dabeli Masala Recipe
- To make Dabeli Masal place a pan on low flame.
- Now add 1/2 cup of coriander seeds, 1 tbsp of fennel seeds, 2 inches of cinnamon stick, 1 tbsp of cumin seeds, 1 tsp of black peppercorns, 7 cloves, 2 black cardamoms, and 2 Star anise.
- Now dry roast everything until aromatic.
- After roasting for a while, add 1 tbsp of white sesame and roast it well.
- Add 2 bay leaf, 5 dry red chilies, and roast everything well.
- Now turn off the gas and transfer everything to a plate.
- Now when the mix is a little hot then add 4 tbsp of desiccated coconut, 4 tbsp of red Kashmiri red chillli powder, and mix everything well.
- Now add 1 tbsp of black salt, 1 tbsp of dry mango powder, 1 tsp of salt, and mix everything and cool completely.
- Add all mix into a grinding jar and belnd well.
- Transfer mix into a bowl & ass 2 tsp Sugar & mix well.
- Now add 1 tbsp of Groundnut oil and mix well.
- You can Store this Masala for more than 5 to 6 months in an airtight box.
Step – 2 Red Garlic Chutney / Lal Lehsun Chutney
- To make Garlic Chutney First of all take a Grinding jar and add 1/2 cup of garlic, 4 tbsp of Kashmiri red chili, 1/4 cup of roasted peanuts, salt as per taste, 1 tsp of lemon juice, and blend everything well.
- Now add 1/2 cup of water and blend again.
- Now transfer it into a bowl and add water to it and adjust consistency.
- Now add 1 tsp of peanut oil and mix well.
- Now your Garlic chutney is ready and you can store it for 2 months in the freezer.
Step – 3 Masala Peanut
- Now take a bowl and add 1/2 cup of roasted peanut.
- Now add 2-3 tbsp of roasted prepared dabeli masala, 1 tsp of groundnut oil, and mix well.
- Now your Masala Peanut is also ready.
Step – 4 Onion Hari Mirch/Green Chili Mix
- Now take a bowl and add 1 chopped onion, 3 chopped green chili, chopped coriander, 1 tsp of lemon juice.
- Now mix everything well and keep it aside.
Step – 5 Dabeli Aloo Masala Filling
- First of all put a pan on gas 2 tbsp of oil and heat on medium flame.
- Now add 4 tbsp of Dabeli Masala and mix well and heat.
- Now add 5 mashed Boiled potatoes and mix well and roast.
- Now add 1/2 cup of water and mix well.
- Now add 2 tbsp of Mithi chutney (Tamarind chutney ) and mix well.
- Now add salt as per taste and mix well.
- Now turn off the gas and transfer it to the plate and spread.
- Top it with desiccated Coconut.
- Now top it with masala peanuts.
- Now top it with prepared onion and green chili mix.
- Now top it with Nylon sev and top it with pomegranate seeds.
- Now garnish it with green chopped coriander.
- Now Dabeli aloo filling is ready.
Step – 6 Dabeli Recipe
- Now take Pav Bread and slite it in the Middle.
- Now in the mid of pav spread, 1 tsp of red chutney, 1 tsp of mithi chutney.
- Now add 1 tbsp of potato filling into mid to it.
- Now add onion mix and peanuts and again add some potato filing in the Pav.
- Now coat pav with nylon sev.
- Now follow the same process and prepare all in same way.
- Place tawa on low flame.
- Add butter & melt it.
- place prepared Dabeli on tawa & roast on all sides until golden.
- Now your Dabeli is completely ready and you can garnish it with coriander and pomegranate seeds and you can enjoy them.

Kutchi Dabeli Recipe – Step By Step
Step – 1 Dabeli Masala Recipe
1 -To make Dabeli Masal place a pan on low flame.
2 – Now add 1/2 cup of coriander seeds, 1 tbsp of fennel seeds, 2 inches of cinnamon stick, 1 tbsp of cumin seeds, 1 tsp of black peppercorns, 7 cloves, 2 black cardamoms, and 2 Star anise.
3 – Now dry roast everything until aromatic.
4 – After roasting for a while, add 1 tbsp of white sesame and roast it well.
5 – Now add 2 bay leaves, 5 dry red chillies, and roast everything well.
6 – Now turn off the gas and transfer everything to a plate.
7 – Now when the mix is a little hot then add 4 tbsp of desiccated coconut, 4 tbsp of red Kashmiri red chilli powder, and mix everything well.
8 – Now add 1 tbsp of black salt, 1 tbsp of dry mango powder, 1 tsp of salt, and mix everything and cool completely.
9 – Now take a grinding jar and add all mix into it and grind well and prepare a fine powder.
10 – Transfer mix into a bowl & ass 2 tsp Sugar & mix well.
11 – Now add 1 tbsp of coconut oil and mix well.
12- Now You can Store this Masala for more than 5 to 6 months in an airtight box.

2 – Now add 2-3 tbsp of roasted prepared Dabeli masala, 1 tsp of groundnut oil, and mix well.
3 – Now your Masala Peanut is also ready.
Step – 4 Onion Hari Mirch/Green Chili Mix for Kutchi Dabeli
1 – Now take a bowl and add 1 chopped onion, 3 chopped green chilli, chopped coriander, 1 tsp of lemon juice.
2 – Now mix everything well and keep it aside.

Step – 6 Dabeli Recipe
1 – Now take Pav Bread and slite it in the Middle.
2 – Now in the mid of pav spread, 1 tsp of red chutney, 1 tsp of Mithi chutney.
3 – Now add 1 tbsp of potato filling into mid to it.
4 – Now add onion mix and peanuts and again add some potato filing in the Pav.
5 – Now coat paw well with nylon Sev.
6 – Now follow the same process and prepare Dabeli from all Pav.
7 – Now put a Tawa on the pan and add butter to it.
8 – place prepared Dabeli on Tawa & roast on all sides until golden.
9 – Now your Dabeli is completely ready and you can garnish it with coriander and pomegranate seeds and you can enjoy them.
