Ingredients of Cheesy Vada Pav Recipe

  • Oil – 1 tsp
  • Garlic – 8 To 10 Cloves
  • Peanuts – 5 tbsp
  • Kashmiri Red Chili – 10 pcs
  • Sesame Seeds – 2 tbsp
  • Desiccated Coconut – 5 tbsp
  • Kashmiri Red Chili Powder – 2 tbsp
  • Salt as per taste
  • Dry Mango Powder

1. Prepare Dry Red Garlic Chutney: Heat 1 tsp oil in a pan. Sauté 8–10 garlic cloves, then add 4–5 tbsp raw peanuts. Add 8–10 Kashmiri dry red chilies and roast. Add 2 tbsp sesame seeds and 4–5 tbsp desiccated coconut. Roast everything for 2–3 minutes and turn off the heat.
2. Blend the Dry Chutney: Let the roasted mix cool. Transfer to a blender, add 2 tbsp Kashmiri red chili powder, salt, and 1 tsp amchur (dry mango powder). Blend coarsely. Store in an airtight jar for up to 1 month.
3. Make Green Chutney: In a blender, combine 1 handful coriander, a little mint, 2–3 green chilies, 3–4 garlic cloves, 1-inch ginger, 1 tbsp roasted peanuts (or coconut/daliya/till), 1 tbsp grated apple, salt, kala namak, hing, and 1 tbsp lemon juice. Blend without water to a thick paste.
4. Make the Garlic Butter: Mix 2–3 tbsp softened butter with crushed garlic and chopped coriander. Set aside.
5. Prepare Vada Masala: In a mortar-pestle, crush 1-inch ginger, 2 green chilies, 3–4 garlic cloves, and a few coriander stems coarsely.
6. Cook the Masala: Heat 2 tbsp oil in a pan. Add 1 tsp mustard seeds, ½ tsp cumin seeds, curry leaves, a pinch of hing, and the crushed ginger-garlic mix. Sauté for a few seconds.
7. Spice It Up: Add ¼ tsp turmeric and sauté briefly. Then add 3–4 boiled potatoes (hand-crushed). Mix and mash slightly for a rustic texture.
8. Finish the Aloo Masala: Add salt to taste and chopped coriander. Mix well and turn off the heat. Let the masala cool.
9. Prep the Pav Buns: Take ladi pavs and slice each horizontally. Spread green chutney on the base.
10. Layer the Filling: Place a generous layer of aloo masala over the green chutney. Add a cheese slice and some grated mozzarella (optional).
11. Add Dry Chutney: Sprinkle the dry red garlic chutney generously over the cheese. Cover with the top bun.
12. Toast on Tawa: Heat a tawa, brush garlic butter on it. Place the sliders on the tawa, press gently, and cover with a lid or bowl. Toast on low flame until cheese melts.
13. Serve Hot: Once the cheese is gooey and buns are golden crisp, remove and serve hot. Enjoy the ultimate fusion of cheesy burger and authentic vada pav flavor!
