  • Ghee – 1 tbsp
  • Almonds – 2 tbsp
  • Cashew – 2 tbsp

Materials

  • Sabudana – 1/2 cup
  • Ghee – 1 tbsp
  • Almonds – 2 tbsp
  • Cashew – 2 tbsp
  • Pistachio
  • Chironji
  • Raisins – 2 tbsp
  • Milk – 1 ltr
  • Sugar – 1/2 cup
  • Cardamom Powder

Instructions

  • Take 1/2 cup of sabudana (sago pearls), rinse thoroughly, and soak in slightly less than 1/2 cup of water for 1 hour.
  • Heat ghee in a kadhai over medium flame.
  • Add chopped dry fruits and roast them lightly for 40 seconds, then transfer them to a plate.
  • In the same kadhai, add 2 tbsp of raisins and roast for a few seconds, then transfer them to the plate.
  • Clean the kadhai, pour in 1 liter of milk, and bring it to a boil.
  • After 1 hour, check the soaked sabudana and soak them in hot water for 2 minutes.
  • Drain the excess water using a strainer.
  • Add the soaked sabudana into the boiling milk and let it cook.
  • In a separate pan, spread 1/2 cup of sugar and cook on medium flame until it starts melting.
  • Stir with a spatula and continue cooking until the sugar turns golden brown.
  • Turn off the flame, carefully add 1/4 cup of water, and mix well to make a smooth caramel syrup.
  • Once the kheer thickens, pour in the caramel syrup, mix well, and cook for 2 minutes.
  • Add cardamom powder and the roasted dry fruits, mix well, and cook for another 2 minutes.
  • Turn off the flame and let the Caramel Sabudana Kheer rest for a few minutes.
