Materials
- Coriander – 1 tbsp
- Cumin – 1 tsp
- Fennel Seeds – 1 tsp
- Black Pepper – 1 tsp
- Ginger – 1 inch
- Green Chilli – 3 Pcs
- Coriander Leaves
- Mint Leaves
- Asafoetida – 2 pinch
- Water – 1 tsp
- Ghee – 2 tbsp
- Oil – 1 tsp
- Bay Leaf – 1 pcs
- Cardamom – 2 pcs
- Clove - 3 pcs
- Tomato – 2 pcs
- Salt as per Taste
- Turmeric – 1/2 tsp
- Kashmiri Red Chilli Powder – 2 tsp
- Water – 4 tbsp
- Coriander Powder – 1 tsp
- Garam Masala – 1/2 tsp
- Kasoori Methi
- Black Salt
- Boiled Potato – 5 pcs
- Hot Water
- Amchoor Powder – 1 tsp
- Ghee – 1 tbsp
- Asafoetida – 1 pinch
- Kashmiri Red Chilli Powder – 1/2 tsp
- Split Green Chilli – 3 Pcs
- Ginger Julien
- Chopped Coriander Leaves
Instructions
- To make the tastiest and perfect Aloo Ki Sabji, take a crusher, add 1 tbsp of coriander seeds, 1 tsp of fennel seeds, 1 tsp of cumin seeds, 1 tsp of peppercorns, 1 inch of ginger, 2-3 green chillies, and crush well.
- Now take a grinding jar, add coriander leaves, mint leaves, 1/2 tsp of asafoetida, and 1 tsp of water, and make a coarse paste.
- Now place a kadhai on flame, add 2 tablespoons of ghee and 1 teaspoon of oil, and heat well.
- Now add 1 bay leaf, 2 green cardamoms, and 3 cloves, and roast a little.
- Now add the prepared crushed masala and mix everything well.
- After some time, add prepared paste, mix well, and cook.
- After roasting well, add chopped tomatoes, salt as per taste, 1/2 tsp of turmeric powder, 2 tsp of Kashmiri red chili powder, and 3-4 tbsp of water, and cook well.
- After the tomatoes release the oil, add 1 tsp of coriander powder, 1/2 tsp of garam masala, 1 tsp of Kasoori methi, and black salt, and mix everything well.
- After a minute, add 5 boiled, crushed potatoes and mix well.
- Now add 3-4 cups of hot water and 1 teaspoon of dry mango powder and mix well.
- Now close the lid and cook well for 3-4 minutes.
- After 3-4 minutes, place a tempering pan on flame, add 1 tablespoon of ghee, and heat well.
- After the ghee is hot, add a pinch of asafoetida and 1/2 teaspoon of Kashmiri red chili powder and mix well.
- Now check the sabji, add split green chillies, ginger juliens, prepared tempering, and cover it for 30 seconds.
- Now your perfect Bhandare Wali Aloo Ki Sabji is completely ready, and you can enjoy it.
