Materials
- Wheat flour – 2 cup
- Gram flour – 5 tbsp
- Salt – 1 tsp
- Carom Seed – 1 tsp
- Pure Ghee – 1 tbsp
- Oil – 1 tsp
- Cumin Seed – 1 tsp
- Asafoetida – 1/4 tsp
- Aniseed
- Coriander Seed -1 tsp
- Chopped onion – 1
- Turmeric Powder – 1/4 tsp
- Boiled Potato – 4
- Red Chili – 1 tsp
- Garam Masala – 1/2 tsp
- Chaat Masala – 1 tsp
- Kasoori Methi – 1 tsp
- Salt as per Taste
- Chopped Coriander
- Pure Ghee
For Instant Chutney
- Garlic
- Cumin seeds – 1 tsp
- Asafoetida- 1/4 tsp
- Salt as per Taste
- Kashmiri Red Chili Powder – 1 tbsp
- Tomato – 1
- Water
Instructions
- To make the perfect Aloo Pyaz Paratha, take a wide plate, add 2 cups of wheat flour, 5 tbsp of gram flour, 1 tsp of salt, and 1 tsp of carom seeds, and mix everything well.
- Next step: little by little, add water and prepare a semi-soft dough.
- Next step: apply ghee to the dough, knead again, and let it rest for 10–15 minutes.
- Next step: place a pan on flame, add one teaspoon of oil, and heat well.
- Next step: add 1 tsp of cumin seeds, 1/4 tsp of asafoetida, 1 tsp of crushed aniseeds, and 1 tsp of crushed coriander seeds, and roast a little.
- Next step: add 1 tbsp of ginger-garlic-green chilli paste and roast.
- Next step: add one finely chopped onion and 1/4 tsp of turmeric powder and roast well on medium to high flame.
- After roasting well, turn off the flame and let it cool.
- Next step: take four boiled potatoes and grate them with the help of a grater.
- Next step: add prepared masala, 1 tsp of coarse red chilli powder, 1/2 tsp of garam masala, 1 tsp of chaat masala, and 1 tsp of Kasoori methi.
- Next step: add salt as per taste, chopped coriander, and gently mix everything well.
- Next step: check the dough, take a small portion of the dough, coat it with flour, and roll it to medium thickness.
- Next step: apply the ghee, place the prepared stuffing into it, and give it a squire shape.
- Next step: flip the paratha from all four sides and give it a squire shape.
- Next step: roll the paratha and prepare a square-shaped paratha.
- Next step: place the paratha on the hot tawa and roast for 30 seconds.
- After 30 seconds, flip the paratha and roast for 30 seconds.
- After 30 seconds, flip the paratha, apply the ghee on both sides and roast well until golden.
- After the Paratha turns golden, transfer it to a plate and roast the next Paratha.
Instant Chutney Recipe
- Take a grinding jar, add garlic cloves, one teaspoon of cumin seeds, 1/4 teaspoon of asafoetida, salt as per taste, and one teaspoon of Kashmiri red chilli powder.
- Next step: add one chopped tomato, one green chilli, 1/2 inch of ginger, and a little water, and make a fine paste.
- Next step: place a tempering pan on flame, add one tablespoon of oil and prepared paste, and cook on low heat.
- Once the chutney is cooked, turn off the flame and take it out in a bowl.
