Materials
- Semolina – 1 cup
- Clarified Butter – 1/2 cup
- Milk – 2 tbsp
- Sugar – 1 cup
- Water – 1/2cup
- Cardamom Powder – 1/4 tsp
- Pistachio
- Almonds
Instructions
- To make the Halwai style Sooji Ki Barfi, place a kadhai on low medium flame, add 3 tbsp of ghee, and heat well.
- After the ghee melts, add 1 cup of Sooji and roast well for 3-4 minutes.
- After roasting for 3-4 minutes, turn off the flame.
- Next step – add 2 tbsp of milk with cream, mix well, and keep it aside.
- Next step – place another pan on flame, add 1 cup of sugar, 1/2 cup of water, and melt well.
- After the sugar melts, add 1/4 tsp of cardamom powder, mix well, and cook for 2-3 minutes.
- After the sugar syrup turns sticky, turn off the flame.
- Next step – place sooji pan on low flame, little by little add prepared sugar syrup and mix well.
- After mixing well, cook on low flame until the mix starts leaving the pan.
- After the barfi mix starts leaving the pan, add 2 tbsp of ghee and mix well.
- Next step – turn off the flame, transfer the barfi mix to a greased plate, and spread well.
- Next step – Garnish the barfi with chopped pistachio and almonds and let it set for 1/2 hour.
- After 1/2 hour, check the barfi and cut it into small pieces.
- Now your perfect Sooji Ki Barfi is completely ready, and you can enjoy it.
