A very simple recipe to make a clear veg soup. This soup is light, healthy and nutritious. you can use Veggies of your choice or any spare veggie that you have in the fridge.

INGREDIENTS
Finely Chopped Beans – 2 tbsp
Finely Chopped Carrot – 2 tbsp
Finely Chopped Cabbage – 2 tbsp
Finely Chopped Capsicum – 2 tbsp
Finely Chopped Cauliflower – 2 tbsp
Finely Chopped Tomato – 2 tbsp
Finely Chopped Onion – 2 tbsp
Finely Chopped Ginger – 1/2 inch
Finely Chopped Garlic – 3 cloves
Butter – 1 tbsp
Bay Leaf – 1
Green Peas – 1 tbsp
Sweet Corn – 1 tbsp
Spring Onion – 1 tbsp
Pepper powder – 1 tsp
Salt as per taste
Water – 4 cups
Corn Flour -1 tbsp
Lemon Juice – 1 tsp
Finely Chopped Coriander

  • To make veg soup Take a kadhai.
  • Add butter and mely.
  • Add ginger,garlic and saute.
  • Add bay leaf.
  • Add onion and fry until traslucent.
  • Add all veggies except tomato.
  • Saute on low medium flame.
  • Add tomato,Green Peas,Sweet corn,Mix and saute.
  • Add spring onion,Pepper powder,Salt and mix well and saute.
  • Add Water,Mix and close lid and boil for 3-4 mins.
  • Take bowl add Corn Flour,water and prepare slurry.
  • Check after 4 mins.
  • Add prepared slurry and mix well.
  • Boil for 2 mins.
  • Add Lemon Juice mix well.
  • Add Finely Chopped Spring onion,Finely Chopped Coriander.
  • Turn off flame and serve.
  • Hot Hot Delicious Vegetable Soup is ready to serve.Enjoy!!
