Materials
- White Sesame – 1 cup
- Desiccated Coconut – 1 small cup
- Cashew & Almonds – 50 gm
- Cardamom Powder – 1/2 tsp
- Ghee – 1 tbsp
- Rock Sugar – 1 cup
- Water – 1 cup
Instructions
- Roast Sesame Seeds: Heat a kadhai (wok) on medium flame. Add 1 cup of sesame seeds and roast lightly until aromatic. Remove from heat and transfer to a plate to cool.
- Grind Sesame Seeds: Once cooled, grind the sesame seeds in a blender to make a coarse powder. Transfer this powder to a bowl.
- Mix Dry Ingredients: Add 1 cup of desiccated coconut, 50 grams of almond and cashew powder, and a pinch of cardamom powder to the sesame powder. Mix everything thoroughly.
- Lightly Roast the Mixture: In the same kadhai, heat 1 tablespoon of ghee. Add the prepared mixture and roast briefly. Turn off the heat and let it cool.
- Prepare Syrup: Heat the kadhai again and add 250 grams of Mishri (rock sugar) along with 1 cup of water. Cook until the syrup becomes sticky (one-string consistency).
- Combine Syrup and Mixture: Gradually pour the syrup into the roasted mixture while stirring continuously. Cook the combined mixture until it starts leaving the sides of the pan.
- Set the Barfi: Transfer the mixture to a greased plate or tray and spread it evenly. Allow it to set at room temperature.
- Cut and Serve: Once the mixture has cooled and firmed up, cut it into small pieces.
