- Poha – 1/2 cup
- Sooji / Semolina / Rava – 1 cup
- Curd – 1 cup
- Boiled Potato – 1/2 cup
- Chopped Green Chilli – 3 pcs
- Chopped Ginger – 1/2 inch
- Curry Leaves Salt – 1 tsp
- Black Pepper – 1/2 tsp
- Baking Soda – 1/4 tsp
- Chopped Coriander Leaves
- Oil for Frying
Chutney Recipe
- Fresh Coconut Green Chilli – 3 pcs
- Ginger – 1/2 inch
- Imly

- Bengal Gram – 1 tbsp
- Water – 1/2 cup
- Oil – 1 tbsp
- Mustard Seeds – 1 tsp
- Asafoetida – 1/4 tsp
- Urad Dal – 1/2 tsp
- Curry Leaves
Instructions
- To make the amazing Poha Medu Vada, take a grinding jar, add 1/2 cup of Poha, and make a fine powder.
- Now take a bowl, add Poha powder, 1 cup of semolina, 1 cup of curd, and mix everything well.
- Now cover the mix and let it rest for 5 minutes.
- After 5 minutes, add 1/2 cup of boiled potato, 3 chopped green chilies, curry leaves, and grated ginger.
- Now add salt as per taste, black pepper powder, 1/4 tsp of baking soda, and chopped coriander, and mix everything well.
- Now, one by one, prepare small Vada with the mix.
- Now place a pan on flame, add oil for frying, and heat well.
- After the hot oil, add the prepared Medu Vada and fry until golden and crispy.
- After the Medu Vada turns golden and crispy, transfer the vada to a plate and fry the next batch.
- Your perfect Medu Vada is completely ready, and you can enjoy them.
Hotel-style Chutney Recipe
- To make the perfect hotel-style chutney, take a grinding jar, add fresh coconut, 3 green chilies, 1/2 inch of ginger, tamarind, salt, asafoetida, coriander leaves, 1 tbsp of Bengal gram, and 1/2 cup of water.
- Now grind everything well and make a fine paste.
- Now place a small pan on flame, add 1 tablespoon of oil, and heat well.
- After the oil is hot, add 1/2 tsp of mustard seeds, 1/4 tsp of asafoetida, 1/2 tsp of urad dal, curry leaves, and two dry red chilies.
- Now pour the tempering on the chutney.
