Materials
- Oil – 2 tbsp
- Chopped Onion – 2 pcs
- Garlic Ginger – 1 inch
- Green Chilli – 2 Pcs
- Tomato – 2 pcs
- Salt – 1 tsp
- Cashew – 9 pcs
- Coriander Leaves
- Bay Leaf – 2 pcs
- Clove – 3 pcs
- Black Pepper – 12 pcs
- Cinnamon – 1 stick
- Cardamom – 2 pcs
- Black Cardamom – 1 pcs
- Fennel Seeds – 1 tsp
- Cumin – 1 tbsp
- Coriander – 1 tbsp
- Kasoori Methi – 1 tbsp
- Ghee – 1 tbsp
- Oil – 2 tsp
- Cumin – 1/4 tsp
- Kashmiri Red Chilli Powder – 2 tsp
- Hot Water – 1.5 cup
- Green Pea – 1/2 cup
- Paneer – 250 gm
- Salt as per Taste
- Chopped Coriander Leaves
- Splitted Green Chilli
Instructions
- Begin by chopping all the vegetables: carrot, potato, cauliflower, French beans, peas, onion, capsicum, and paneer into small pieces.
- Heat 4 tbsp of oil in a kadhai (wok) on medium flame. Once hot, add the chopped potatoes and fry for about 1 to 1.5 minutes until slightly golden.
- Add the remaining vegetables to the kadhai and fry them together for a few minutes until they begin to soften.
- Season with salt, Kashmiri red chili powder, and turmeric powder. Mix well and continue frying for a few more minutes. Once cooked, transfer the vegetables to a plate and set aside.
- In the same kadhai, add the paneer pieces. Sprinkle with a little salt and fry until golden brown. Remove and transfer the paneer to a plate.
- Heat a separate pan and add 1 tbsp of oil. Once hot, add a bay leaf, dry red chilies, cloves, cinnamon stick, peppercorns, cardamoms, and cumin seeds. Roast these spices until aromatic.
- Add finely chopped onions to the pan and cook them until they turn a light pink.
- Stir in the chopped ginger, garlic, and dry red chilies. Roast for a minute until fragrant.
- In a small bowl, combine gram flour, Kashmiri red chili powder, coriander powder, cumin powder, chaat masala, kitchen king masala, and a bit of water to form a smooth paste.
- Add this paste to the onions and cook it well, stirring frequently. Once the paste releases oil and thickens, add grated tomatoes and cook until the oil separates from the gravy.
- Season with salt, add 2 tbsp of water, and mix well. Let it cook for a few minutes.
- Stir in 1/2 cup of whisked curd and mix it into the gravy.
- Add the fried vegetables back into the pan and stir well. Let the dish simmer for 3-4 minutes.
