  • Milk Malai – 2 tbsp
  • Hot Water – 2 cup

Instructions

  • Heat the Oil: Place a kadhai (pan) on medium heat. Add 2 tbsp mustard oil and heat it until it starts smoking slightly.
  • Tempering: Lower the heat and add 1 tsp cumin seeds, 1/4 tsp asafoetida, and 1 bay leaf. Sauté until aromatic.
  • Aromatics: Add chopped garlic, grated ginger, and chopped green chilies. Sauté until golden and fragrant.
  • Spices: Add 1/2 tsp turmeric powder, 1 tsp Kashmiri red chili powder, 1 tsp coriander powder, 1/2 tsp cumin powder, and 1 tsp kasoori methi. Mix and roast on low heat to avoid burning the spices.
  • Thickening: Stir in 1 tbsp gram flour and roast until the raw smell disappears.
  • Tomato Base: Add the tomato puree, salt to taste, and a splash of water. Mix well and cook until the oil begins to separate from the mixture.
  • Cook Further: Cover the pan with a lid and let the mixture cook for 1-2 minutes on low heat.
  • Flavor Boost: Remove the lid, add 1 tsp sabji masala or garam masala, and mix well.
  • Creaminess: Stir in 2 tbsp of fresh cream and cook until the gravy releases oil.
