Gobhi Ki Sabji Recipe | How to make Gobhi Ki Sabji at Home | Gobhi Aloo Matar Recipe
Materials
- Cauli Flower - 2 pcs
- Potato – 3 pcs
- Mustard Oil – 5 tbsp
- Bay Leave – 2 pcs
- Cloves – 2 pcs
- Black Cardamom – 1
- Cinnamon – 1 stick
- Coriander – 1 tsp
- Cumin – 1 tsp
- Onion – 3 pcs
- Ginger Garlic, Green Chilli
- Kashmiri Red Chilli Powder – 2 tsp
- Turmeric – 1/2 tsp
- Coriander Powder – 2 tsp
- Cumin Powder – 1 tsp
- Garam Masala – 1/2 tsp
- Kasoori Methi – 1 tsp
- Black Salt
- Gram Flour – 1 tbsp
- Water
- Dry Red Chilli
- Tomato – 3 pcs
- Salt as per Taste
Instructions
- Begin by preparing fresh medium-chopped cauliflower and two medium-sized chopped potatoes.
- Heat a kadhai on medium flame and add 4-5 tablespoons of mustard oil. Allow the oil to heat thoroughly.
- Add the chopped cauliflower and potatoes to the hot oil, shallow frying them until they turn golden.
- Once fried, remove the cauliflower and potatoes from the kadhai and set them aside on a plate.
- In the remaining oil, add 2 bay leaves, 1 black cardamom, 1 cinnamon stick, 1 teaspoon of coriander seeds, and 1 teaspoon of cumin seeds. Roast the spices on low flame until aromatic.
- Add 3 chopped onions to the kadhai and sauté them on medium flame until they turn pink and translucent.
- Stir in chopped ginger, chopped garlic, and chopped green chilies, roasting them until fragrant.
- In a small bowl, combine 2 teaspoons of Kashmiri red chili powder, 1/2 teaspoon of turmeric powder, 2 teaspoons of coriander powder, 1 teaspoon of cumin powder, 1/2 teaspoon of garam masala, 1 teaspoon of kasoori methi, a pinch of black salt, 1 tablespoon of gram flour, and a splash of water to make a smooth paste.
- Add the prepared spice paste and 2 dried red chilies to the kadhai, roasting the mixture until the oil begins to separate.
- Pour in tomato purée, a little water, and salt to taste. Cover the kadhai with a lid and cook the mixture for about 3 minutes.
- Remove the lid, add the fried cauliflower, potatoes, and 1 cup of green peas. Mix everything well.
- Pour in 2-3 cups of hot water, stirring thoroughly. Cover the kadhai again and let the sabji cook for 3-4 minutes.
- After cooking, remove the lid and garnish the sabji with freshly chopped coriander leaves.
- Your perfect Halwai-style Gobhi Aloo Matar ki Sabji is now ready to be enjoyed!
