  • Carrot – 500 gm
  • Green Chilli – 150 gm
  • Fennel Seeds – 4 tbsp
  • Fenugreek Seeds – 1 tsp
  • Cumin – 1/2 tsp
  • Yellow Mustard Dal – 3 tbsp
  • Kashmiri Red Chilli Powder – 1 tbsp
  • Turmeric – 1 tsp
  • Salt as per Taste
  • Black Salt – 1 tsp
  • Mustard Oil – 3/4 cup
  • Asafoetida – 1/2 tsp
  • Nigella Seeds – 1 tsp
  • White Vinegar – 4 tbsp

Instructions

  • Take 500 g of carrots, wash them thoroughly, and cut them into small pieces. Remove the stems of green chillies and cut them into finger-sized pieces.
  • Heat a pan on low flame and add 4 tbsp fennel seeds, 1 tsp fenugreek seeds, 1/2 tsp cumin seeds, 3 tbsp yellow mustard seeds, and 1 tbsp black mustard seeds. Roast the spices for 30–40 seconds, then turn off the flame and let them cool.
  • Add the roasted spices to a grinding jar along with 1 tbsp Kashmiri red chilli powder, 1 tsp turmeric powder, salt to taste, and 1 tsp black salt. Grind everything into a coarse powder.
  • Place a pan on low-medium flame and add 3/4 cup mustard oil. Once the oil is hot, turn off the flame and allow it to cool slightly.
  • Once the oil cools a bit, add 1/2 tsp asafoetida and mix well.
  • In a large bowl, add the prepared carrot pieces and green chillies. Add the ground masala, cooled mustard oil, and 1 tsp Nigella seeds. Mix everything thoroughly.
  • Pour 4 tbsp white vinegar into the mixture and mix well to enhance flavor and shelf life.
  • Transfer the pickle to an airtight jar and let it rest for 1–2 days to develop flavors.
