Materials
- Milk – 1/2 cup
- Sugar – 1/2 cup
- Coffee – 2 tbsp
- Oil – 1/4 tbsp
- Vanilla Essence – 1 tsp
- Oil
- All Purpose Flour – 1 cup
- Fruit Salt – 1 Sachet
- Salt for Baking
Instructions
- To prepare the perfect Sponge Coffee Cake, start by taking a bowl and adding 1/2 cup of warm milk and 1/2 cup of sugar. Stir the mixture well until the sugar dissolves completely.
- Add 2 tablespoons of coffee to the bowl and mix thoroughly to ensure the coffee blends smoothly into the milk and sugar mixture.
- Next, add 1/4 cup of refined oil and 1 teaspoon of vanilla essence to the mixture. Whisk everything together until it is well combined.
- Prepare a cake tin by greasing it with oil and lining it with a butter paper to prevent the cake from sticking.
- Sift and add 1 cup of all-purpose flour into the wet mixture. Gently fold and mix until you achieve a smooth, ribbon-like batter consistency.
- Add 1 sachet of fruit salt (eno) to the batter, followed by a splash of water, and mix quickly and lightly to activate the fruit salt.
- Pour the batter into the prepared cake tin, spreading it evenly for uniform baking.
- Preheat a cooker by placing it on medium flame, filling the base with salt, and placing a stand inside. Cover the cooker and preheat it for 5 minutes.
- After preheating, carefully place the cake tin inside the cooker, close the lid (without the whistle), and bake for 30 minutes on medium flame.
- Check the cake after 30-40 minutes by inserting a toothpick or skewer into the center. If it comes out clean, the cake is ready. Remove it from the cooker and place it on a plate to cool.
- Once cooled, gently de-mold the cake by running a knife along the edges and lifting it out of the tin.
- Your soft and delicious Sponge Coffee Cake is now ready to be enjoyed. Slice and serve it with your favorite beverage or as a standalone treat!
