  • To make the most delicious Halwai-style Gajar Ka Halwa, start by taking 1.5 kilograms of carrots. Wash them thoroughly and peel off the outer skin.
  • Trim both ends of the carrots and cut them into small, manageable pieces.
  • Use a chopper to finely chop the carrots into small, uniform bits to ensure they cook evenly.
  • Place a kadhai (deep pan) on medium flame and add 3 tablespoons of ghee. Allow the ghee to heat up well.
  • Once the ghee is hot, add a mix of chopped dry fruits like almonds, cashews, and pistachios. Roast them lightly until golden and aromatic, then transfer them to a plate and set aside.
  • Add a little more ghee to the same Kadhai, followed by the chopped carrots. Cook the carrots for 7-8 minutes with the lid closed, stirring occasionally to prevent sticking.
  • After 7-8 minutes, pour 750 ml of full-fat boiled milk into the kadhai. Mix well, close the lid, and cook the carrots until they absorb the milk completely.
  • Once the milk is fully absorbed, add 1.25 cups of sugar and stir it in thoroughly, allowing the sugar to dissolve and blend with the carrots.
  • Add 1 teaspoon of cardamom powder, 200 grams of grated Mawa (khoya), and 1 tablespoon of ghee to the halwa. Mix everything well until it reaches a rich, creamy consistency.
