Materials
- Cauliflower – 1 (450 grams)
- Potato – 5Oil – 4 tbsp
- Salt – 1/2 tsp
- Turmeric Powder – 1/2 tsp
- Oil – 2 tbsp
- Cumin seeds – 1/2 tsp
- Bay Leaf – 2
- Cardamom – 3
- Cloves/Laung – 2 Star
- Anise/Chakraphool
- Cinnamon Stick/DalchiniChopped Onion – 2
- Turmeric Powder – 1/2 tsp
- Turmeric Powder – 1/2 tsp
- Coriander Powder -2 tbsp
- Cumin Powder – 1 tsp
- Red Chili – 1 tsp
- Kasoori Methi – 1 tbsp
- Kasoori Methi – 1 tbsp
- Water – 3/4 cup
- Coriander leaves for garnishing
For Masala
- Ginger – 1/2 inch
- Garlic – 8 to 10
- Green chilli – 2 to 3
- Coriander Seed – 1 tbsp
- Black Pepper – 7 to 8
- Chopped Beetroot – 1/4
Instructions
- To make amazing and perfect Aloo Gibi Ki Sabzi, first take 450 grams of medium-sized gobi Pieces.
- Now, take five medium-sized potatoes and peel & cut them into two pieces and add them into water(so they do not turn dark).
- Now strain the water from and potatoes and clean the water with the help of a cloth.
- Now, place a cooker on flame, add 4 tbsp of oil, and heat well.
- After the hot oil, add the Gobi into the cooker and fry well until it turns a little golden.
- Now add 1/2 tsp of salt, 1/2 tsp of turmeric powder and mix well.
- After the Gobi turns golden, transfer it to a plate.
- Now add 2 tbsp of oil, potatoes to the cooker and roast well.
- After Potato turns golden, transfer it to the plate.
- Now again, add 2 tbsp of oil to the cooker and heat well.
- After the oil is hot, add 1/2 tsp of cumin seeds, two-bay leaf, three green cardamoms, two cloves, one-star anise, one cinnamon stick, and roast a little on low flame.
- Now add two dry red chillies, two finely chopped onions and roast well on medium flame until it turns little pink.
- While roasting the onion, take a grinding jar and add Ginger – 1/2 inch, Garlic – 8 to 10, Green chilli – 2 to 3, Coriander Seed – 1 tbsp, Black Pepper – 7 to 8.
- Now add 1/4 pcs of chopped beetroot, 1 tbsp of water and grind well.
- After onion turn golden, add the prepared paste and mix well and roast until the beetroot is roasted well.
- After the mix starts releasing the oil, add coarse paste of 2 tomatoes, mix well and roast a little.
- Now add 1/2 tsp of turmeric powder, 2 tbsp of coriander powder, 1 tsp of cumin powder, 1 tsp of red chilli powder, 1/2 tsp of garam masala, 1 tbsp of Kasuri methi, 1 tbsp of water, mix everything well and cook.
- After the Masala starts releasing the oil, add roasted Gobi & Potato, mix well, and cook for 1 minute.
- After 1 minute, add 3/4 cup of water and mix well.
- Now, close the lid and cook until a whistle.
- After a while, turn off the flame and let the pressure release completely.
- After pressure is released completely, remove the lid, check it and garnish it with coriander.
- Now your amazing and Perfect Aloo Gobi is ready, and you can enjoy it.

18 -After the Masala starts releasing the oil, add roasted Gobi & Potato, mix well, and cook for 1 minute.
19 – After 1 minute, add 3/4 cup of water and mix well.
20 – Now, close the lid and cook until a whistle.
21 – After a while, turn off the flame and let the pressure release completely.
22 – After pressure is released completely, remove the lid, check it and garnish it with coriander
23 – Now your amazing and Perfect Aloo Gobi is ready, and you can enjoy it.
