Chole Bhature Recipe | How to make Chole Bhature at Home | Chana Bhatura Recipe
Materials
- Chickpea / Kabuli Chana – 2 cup
- Bay Leaf – 1 pcs
- Cinnamon – 1 stick
- Black Cardamom – 1 pcs
- Green Cardamom – 2 pcs
- Cloves – 4 pcs
- Salt as per Taste
- Baking Soda – 1/4 tsp
- Oil – 1 tsp
- Water – 2 glass
- Tea – 2 tbsp
- Oil – 2 tbsp
- Cumin – 1/2 tsp
- Ajwain / Carom Seeds – 1/2 tsp
- Asafoetida – 1/4 tsp
- Ginger Garlic & Green Cilli Paste – 1 tbsp
- Kashmiri Red Chilli Powder – 1 tsp
- Black Salt – 1 tsp
- Salt – 1/2 tsp
- Turmeric – 1/4 tsp
- Home Made Chole Masala – 2 tbsp
- Kasoori Methi – 1 tbsp
- Tomato Paste – 2 pcs
- Caramelized Onion – 1 pcs

- Ghee – 1 tbsp
- Chopped Garlic
- Splited Green Chilli – 3 pcs
- Home Made Chole Masala – 1 tsp
- Kashmiri Red Chilli Powder – 1 tsp
- Chopped Coriander
Ingredients of Masala
- Cinnamon – 2 stick
- Cardamom – 2 pcs
- Cloves – 5 pcs
- Black Pepper – 10 pcs
- Cumin – 1 tbsp
- Coriander – 2 tbsp
- Black Cardamom – 1 pcs
- Dry Red Chilli – 5 pcs
- Bay Leaf – 2 pcs
- Funnel Seeds – 1 tbsp
- Dry Pomegranate Seeds – 2 tbsp
Ingredients of Bhatura
- Sooji/Semolina/Rava – 4 tbsp
- Curd – 1/2 cup
- Salt – 1 tsp
- Sugar Powder – 1 tsp
- Maida/All Purpose Flour – 2 cup
- Baking Powder – 1/2 tsp
- Oil – 1 tbsp
- Oil for Fry
Instructions
- To make the perfect Delhi-style Chole Bhature, place a cooker on flame and add overnight-soaked Kabuli chana.
- Now add 1 cup of water, 1 bay leaf, 1 cinnamon stick, 1 black cardamom, 2 green cardamom, 4 cloves, salt as per taste, 1/4 tsp of baking soda, and 1 tsp of oil.
- Now place a pan on flame, add 2 cups of water, and boil.
- After a boil, add tea powder (Chai Patti), and boil well.
- Now filter the water and add the filtered chai water into the cooker.
- Now close the lid and cook until one whistle on high flame, and after a whistle, cook for another four whistles on low-medium flame.
- After 4 whistles, check the chole and remove the lid.
- Now place a pan on flame, add 2 cinnamon sticks, 2 green cardamoms, 5 cloves, 8-10 peppercorns, 1 tbsp of cumin seeds, 2 tbsp of coriander seeds, 1 black cardamom, 4-5 dry red chillies, 2 way leaves, 1 tbsp of fennel seeds, and 2 tbsp of dry pomegranate seeds, and roast well.
- After 3-4, turn off the flame and let everything cool.
- Now add all the ingredients into a grinding jar and make a fine powder.
- Now place a kadhai on flame, add 1/2 tsp of cumin seeds, 1/2 tsp of carom seeds, and 1/4 tsp of asafoetida, and roast everything well.
- Now add 1 tbsp. of ginger garlic green chili paste and mix everything well.
- Now add 1 tsp of Kashmiri red chili powder, 1 tsp of black salt, 1/2 tsp of white salt, 1/4 tsp of turmeric powder, 2 tbsp of chole masala, 1 tbsp of kasoori methi, and 1/4 cup of water and roast on low flame.
- After a minute, add tomato puree and cook well.
- Now add 1 laddle chole and mash well.
- Now add the caramelized onion and roast well.
- After the gravy starts releasing the oil, add cooked chole and mix well.
- Now place a pan on flame, add 1 tbsp of ghee and chopped garlic, 2-3 split green chillies, 1 tsp of homemade chole masala, 1 tsp of Kashmiri red chili powder, and mix well.
- Now add the prepared tempering and chopped coriander into the chole and mix well.
- Now your perfect Chole is completely ready.
Bhature Recipe
- Take a wide plate, add 4 tbsp of sooji, 1/2 cup of curd, 1 tsp of salt, and 1 tsp of sugar powder, and mix everything well.
- Now cover the mix and let it rest for 2 minutes.
- After 2 minutes, add 2 cups of all-purpose flour and 1/2 tsp of baking powder, and mix well.
- Now knead well and prepare a soft dough.
- Now grease the dough with oil, cover it with a cloth, and let it rest for 2 hours.
- After 2 hours, check the dough and prepare small balls with the dough and keep them on a greased plate and keep them covered for 10 minutes.
- After 10 minutes, roll the Bhatura balls to medium thickness.
- Now add the bhatura into the hot oil and fry well on high flame.
- After the Bhatura turns golden, transfer it to a plate and fry the next Bhatura.
- Now your Perfect Chole Bhature is completely ready, and you can enjoy it.
