Materials
- Chopped Tomato – 3
- Ginger – 1.5 inch
- Green Chilli – 2 to 3
- Coriander
- Coriander Seed – 2 tbsp
- Aniseed – 1 tbsp
- Cumin Seed – 1/2 tsp
- Black Salt – 1/2 tsp
- Black Pepper – 4 to 5
- Oil – 2 tbsp
- Pure Ghee – 1 tsp
- Bay Leaf – 2
- Cardamom – 2
- Clove – 2
- Cumin Seed – 1 tsp
- Asafoetida – 1/4 tsp
- Turmeric Powder – 1/2 tsp
- Kashmiri Red Chili Powder
- Gram flour – 1.5 tbsp
- Salt as per Taste
- Kasoori Methi – 1 tsp
- Hot Water – 2
- Boiled Potato – 3
- Aamchoor Powder – 1/2 tsp
- Chopped Coriander
Instructions
- To make the perfect Bhandara-style Aloo Ki Sabji, take a grinding jar, add three chopped tomatoes, 1.5 inch of ginger, 2-3 green chillies, coriander stem, one boiled crushed potato, and make a fine paste.
- Next step: take a crusher, add 2 tbsp of coriander seeds, 1 tbsp of aniseed, 1/2 tsp of cumin seeds, 1/2 tsp of pepper powder, and 4-5 peppercorns, and prepare a course powder.
- Next step: place a Kadhai on flame, add two tablespoons of oil and one tablespoon of ghee, and heat well.
- Next step: add two way leaves, 2-3 green cardamoms, two cloves, one teaspoon of cumin seeds, and 1/4 teaspoon of asafoetida, and mix well.
- Next step: add the prepared masala powder, mix well, and roast a little.
- After roasting a little, add 1/2 tsp of turmeric powder and 1 tsp of Kashmiri red chilli powder, and mix well.
- Next step: add 1.5 tbsp of gramme flour, mix, and roast a little.
- After roasting a little, add a little water and roast well.
- Next step: prepare tomato paste, a little water, salt per taste, and one teaspoon of kasoori methi; mix well and cook.
- After the gravy starts releasing the oil, cover the lid and cook well for 5 minutes.
- After 5 minutes, remove the lid, add 2 cups of hot water (as required), and boil well.
- Next step: add three crushed and boiled potatoes, mix well, and cook for 5 minutes with a closed lid.
- After 5 minutes, remove the lid and add 1/2 tsp of dry mango powder, chopped coriander, and one split green chilli.
