To make the perfect Sabudana Khichdi, take 1 cup of Sbudana, wash well, and soak it in 3/4 cup of water for 2.5 hours.
After 2.5 hours, check the Sabudana and remove the excess water. Next step: place a pan on flame, add one tablespoon of ghee, and heat well.
After hot ghee, add 1 tsp of cumin seeds, 1/2 inch of grated ginger, and two chopped green chilies, and roast a little.
Next step: add two boiled potatoes (cut into diced form) and roast a little. After the potatoes turn golden, add four tablespoons of roasted peanuts and curry leaves and roast a little.
Next step: add soaked Sabudana, rock salt, and one teaspoon of pepper powder, mix well, and roast. After a few seconds, add 2-3 tablespoons of peanut powder, mix well, and cook.
Next step: add lemon juice, mix well, and cook for 2 minutes with a closed lid.
After 2 minutes, check the Sabudana Khichdi and garnish it with chopped coriander and fried peanuts.
