2: After washing, soak the Poha in water for 3 minutes. 3: After 3 minutes, drain the excess water and leave it for 1-2 minutes.
4: Take a bowl, add three boiled and cooled potatoes, and mash well with the help of a masher. 5: Add soaked Poha, salt as per taste, 1 tsp of red chili powder, 1 tsp of chaat masala, and 1/2 tsp of garam masala.
6: Add chopped capsicum, chopped carrot, chopped onion, chopped green chilies, and grated ginger, and mix everything well. 7: Add boiled green peas, corn flour (optional; you can use rice flour, all-purpose flour, gram flour, or arrowroot flour), coriander, and mix everything well.
8: Now, one by one, prepare small patties with cutlet mix. 9: Take a bowl, add two tablespoons of all-purpose flour, two tablespoons of corn flour, salt, and a little water, and prepare a slurry.
10: One by one, dip the prepared cutlets into the slurry and coat them with bread crumbs. 11: Now, keep the entire Poha cutlet in the freezer for 10–15 minutes.
12: After 10–15 minutes, take out the cutlets from the freezer. 13: Place a pan on a flame, add oil for frying, and heat well.
14: Once the oil is hot, add the prepared cutlet and fry well until golden and crispy. 15: After the Poha cutlets turn golden and crispy, transfer them to a plate and fry the next batch.
