To make the perfect Dal Masala Vada, take 1 cup of Chana Dal and soak it in the water for 3-4 hours.
After 3-4 hours, remove the excess water, transfer the 4 tbsp of chana dal into a bowl, and add the remaining chana dal into a grinding jar.
Next step – add 6-7 garlic cloves, two green chillies, 1.5 inches of ginger, two dry red chillies, 1 tsp of cumin seeds, 1 tsp of fennel seeds, two pinches of asafoetida, 2 tbsp of rice flour. Next step – add 2 tbsp of curry leaves, make a coarse paste, and transfer it into a bowl.
Next step – add one chopped onion, chopped coriander, 1 tsp of salt, 1/2 tsp of garam masala, 1/2 tsp of coriander powder, and 4 tbsp of saved chana dal.
Next step – add 1 tbsp of hot oil and mix everything well. Next step – one by one, prepare small Vada with the prepared mix.
Next step – place a pan on flame, add oil for frying, and heat well. After the oil is medium hot, add prepared vada into the oil and fry well until golden & crispy.
After the Vada turns golden & crispy, transfer them to a plate and fry the next batch. Now your perfect Masala Vada is completely ready, and you can enjoy them.
