– Milk – 1 cup – Sugar – 1/4 cup – Milk Powder – 2 tbsp – Corn Starch – 1 tbsp – Fresh Cream – Sugar Powder – 2 tbsp – Butterscotch Essence – 1 tsp – Lemon food colour – Sugar – 1/2 cup (6 tbsp) – Butter – 1 tsp – Almonds – 4 tbsp – Cashew nut – 4 tbsp

To make the perfect Butterscotch Ice cream, take a pan, add 1 cup of milk, 1/4 cup of sugar, 2 tbsp of milk powder, and 1 tbsp of cornstarch, and mix everything well.
Next step – place the pan on low-medium flame and cook until the milk turns thick. After the milk turns thick, turn off the flame, transfer it into a bowl, and keep it in the freezer for 1 hour.
Next step – place a pan on flame, add 6 tbsp of sugar, and melt it on medium flame.
Next step – take a plate and grease it with ghee. After the sugar melts, add 1 tsp of butter and mix well.
Next step – add 4 tbsp of chopped almonds & cashew and mix well. After 30 seconds, turn off the flame, transfer it to the greased plate, and spread well.
After 3-4 minutes, check the caramel crunch and break it into small pieces. Next step – take a pack of Amul fresh cream, and keep it in the fridge for 1 hour.
After 1 hour, separate the thin portion into a bowl (We only need the thick part of the cream). Next step – take a bowl, add 3/4 cup of thick fresh cream, and whisk well with the help of an electric beater or hand whisker.
Next step – add 2 tbsp of sugar powder, prepared chilled milk mixture, 1 tsp of butterscotch essence, and a few drops of lemon food colour, and whisk well. Next step – add prepared caramel crunch and mix well.
Next step – transfer the Ice cream mix into an airtight box and garnish it with caramel crunch. Next step – place a plastic sheet on the ice cream box and close the lid.
Next step – keep the ice cream box in the freezer for 7-8 hours. Now your perfect Butterscotch Ice cream is completely ready, and you can enjoy it.
