To make the tastiest and perfect Thabdi Peda, place a heavy-based kadhai on flame, and add 2 tbsp of water to it. Next step – add 1 liter of milk and boil the milk on medium to high flame.
After a boil, add 1/2 cup of sugar, mix well and boil for 2 minutes. Next step – add 1/2 tsp of alum (Fitkari), crush it well, and make a fine powder.
After 2 minutes, turn the flame to low, add 1/2 tsp of alum powder, and stir continuously. After the milk starts curdling, cook on high flame until milk quantity reduces to 1/2 of its original quantity.
Next step – place another pan on flame, add 1/2 cup of sugar, and melt on low flame(avoid stirring). Next step – After the sugar melts, turn off the flame.
Next step – add caramelized sugar into crumbled milk and mix well. Next step – add 1/4 tsp of cardamom powder and cook until it turns thick.
After the mix turns thick & leaves the pan, turn off the flame and keep stirring. Next step – transfer the mixture to a greased tray, spread well, and let it a little cool.
Next step – prepare the Peda with the remaining mixture and garnish them with chopped pistachio. Now, your perfect and most tasty Thabdi Peda is completely ready, and you can enjoy it.
