To make the amazing Soyabean Ki Sabji, place a pan on flame, add water, and boil well. After the water starts boiling, add 1 tsp of salt, 1/5 cup of soya chunks and boil for 3-4 minutes on medium flame.
After 3-4 minutes, turn off the flame, strain the water, and let the soya chunks cool. Next step – gently squeeze the soya chunks and remove the excess water.
Next step – add salt per taste, 1 tsp of Kashmiri red chilli powder, 1 tsp of kasoori methi, 1 tbsp of coriander powder, 1/2 tsp of cumin powder, 1/2 tsp of turmeric powder, and 1/2 tsp of garam masala. Next step – add 1/2 cup of fresh curd, mix well, and let it rest for 5 minutes.
Next step – place a kadhai on flame, add 2 tbsp of oil, and heat well. Next step – add two roughly chopped onions and roast well on medium to high flame.
Next step – add 2-3 dry red chilies, 10-12 garlic cloves, and 1 inch of ginger and roast well. After the onion turns golden, add coriander stem, 1/2 tsp of turmeric powder, 1/2 tsp of Kashmiri red chilli powder, and roast a little.
Next step – turn off the flame and let it cool. After the mix has cooled, transfer it into a grinding jar and make a fine paste.
Next step – place a kadhai on flame, add 1 tbsp of oil, and heat well. Next step – add one bay leaf, one cinnamon stick, 4-5 peppercorns, two cloves, 1 black cardamom, and 1 tsp of cumin seeds and roast on low flame.
Next step – add prepared gravy mix and cook on low flame. After 2 minutes, add marinated soya chunks and mix well on low flame.
Next step – add 1-5 cups of hot water, chopped tomato mix well, and cook with a closed lid for 7-8 minutes.
After 7-8 minutes, turn off the flame, add garam masala, split green chilli garnish it with chopped coriander. Now your amazing Soyabean Ki Sabji is completely ready, and you can enjoy it.
