Sooji Mawa  Gujiya

– All-purpose flour – 4 cup – Clarified Butter – 1/2 cup – Water  – Chopped Almonds – 2 tbsp – Chopped Cashew nut – 2 tbsp – Chopped Pistachio – 2 tbsp – Desiccated Coconut – 1/2 cup – Golden Raisins – 1 tbsp – Clarified Butter – 1 tbsp – Semolina – 1/2 cup – Mawa – 400 gm – Cardamom Powder – 1/2 tsp – Saffron Strands  – Sugar powder – 1 cup – Clarified Butter

Step 1

First Step - To make the perfect Sooji Mawa Gujiya, take a wide plate, and add 4 cups of all-purpose flour. Next step – add 1/2 cup of ghee in batches and mix well.

Next step – add water in batches, knead well, and prepare a dough. Next step – cover the dough and let it rest for 15 – 20 minutes.

Next step – place a pan on flame, grease it with ghee, add 2 tbsp of chopped almonds, 2 tbsp of chopped cashew, 2 tbsp of chopped pistachio, and roast well. After a minute, add 1/2 cup of desiccated coconut and 1 tbsp of raisins and roast a little.

After roasting a little, transfer the stuffing to a bowl. Next step – place the pan on flame, add 1 tbsp of ghee, and heat well.

After the ghee melts, add 1/2 cup of semolina and roast on medium flame until golden. After the semolina turns golden, turn off the flame and transfers it into the stuffing bowl.

Next step – place the pan on flame, add 400 grams of Mawa, and cook on medium flame. After the Mawa leaves the pan, turn off the flame and let it cool.

Next step -take stuffing bowl, add Mawa, 1/2 tsp of cardamom powder, saffron strands, 1 cup of sugar powder, and mix everything well. Next step – check the dough, knead well again, and prepare small balls with it(keep the dough covered while this process).

Next step – take a dough ball and prepare round poori. Next step – place the poori on the Gujiya mold, apply water on the edges, add prepared stuffing, and close it from all sides.

Next step – remove the excess dough, transfer the Gujiya on a cloth and keep it covered. Next step – prepare the Gujiya with the remaining dough and stuffing.

Next step -place a pan on flame, add ghee and heat well on medium flame. After the ghee is hot, add prepared Gujiya and fry well until golden and crispy.

After the Gujiya turns golden & crispy, transfer them to a plate and fry the next batch. Now your perfect Sooji Mawa Gujiya is completely ready, and you can enjoy them.
