Patra Recipe 

Prep Time: 20 Min

– Arbi Leaves – 8 – Ginger – 1.5 inch – Green chilli – 3 to 4 – Garlic  – Coriander Seed – 2 tbsp – Clove – 2 – Black Peppercorns – 5 to 6 – Water – Gram flour – 2 cup – Red Chili Powder – 1 tsp – Cumin Powder – 1 tsp – Turmeric Powder – 1/2 tsp – Garam Masala – 1/2 tsp – Asafoetida – 2 pinch – Salt as per Taste – Carom Seed – 1 tsp – Ginger garlic paste – 2 tbsp – Sesame seeds – 1 tbsp – Tamarind water – 3 to 4 tbsp – Oil – 1 tsp – Oil for frying

Step 1

To make the perfect Patra, take eight green Arbi Leaves and wash & wipe well. Next step – gently cut the back side thick vines of leaves with the help of the knife.

Next step – gently roll the leaves and flatten these leaves with the help of a roller pin. Next step – take a grinding jar, add 1.5 inches of ginger, 6-7 garlic cloves, 3-4 green chilies, 2 tbsp of coriander seeds, two cloves, and 5-6 peppercorns.

Next step – add little water and prepare a thick paste. Next step – take a bowl, add 2 cups of gram flour, 1 tsp of red chilli powder, 1 tsp of cumin powder, 1/2 tsp of turmeric powder, 1/2 tsp of garam masala, 1/2 tsp of asafoetida, salt per taste, 1 tsp of carom seeds.

Next step – add 2 tbsp of prepared ginger garlic paste, 1 tbsp of white sesame, 3-4 tbsp of tamarind water(with jaggery), and 1 tbsp of oil. Next step – little by little add water and prepare a thick batter.

Next step – place an Arbi leave on a platform from the reverse side and apply the papered batter. Next step – put the second Arbi leave like the following image and apply the prepared batter.

Next step – put the third Arbi leaves & fourth leave alternatively and apply the batter. Next step – flip it from both sides like the following image and apply the batter.

Next step – prepare a roll, seal it from both sides, and apply the batter on both ends. Next step – place a pan on flame, add water, close the lid, and boil.

Next step – place the strainer plate on the kadhai and place the prepared roll into it. Next step – close the lid and stem for 15-20 minutes.

After 15-20 minutes, remove the lid, take out both rolls, and let them cool. Next step – cut both tolls into small pieces.

Next step – place a pan on flame, add oil for shallow frying and heat well. Next step – place the prepared Patra into oil and fry well until golden & crispy.

After the Patra turns golden & crispy, transfer them to a plate and fry the next batch. Now your perfect Patra/Alu Vadi is completely ready, and you can enjoy them.
