To make the perfect Kothimbir Vadi, take two bunches of green coriander, wash well, and remove the stem.
Next step: finely chop the coriander. Next step: take a bowl, add 1.5 cup of gram flour, 2 tbsp of rice flour, 1/4 tsp of turmeric powder, salt as per taste, and mix well.
Next step: little by little add water and prepare a medium-thick batter. Next step: take a crusher, add 3–4 green chillies, 7-8 garlic cloves, and 1 tsp of cumin seeds, and make a coarse paste.
Next step: place a pan on the flame, add two teaspoons of oil, and heat well. Next step: add one teaspoon of cumin seeds and two pinches of asafoetida, and sauté a little.
Next step: add the prepared paste, 1 tsp of Kashmiri red chilli powder, 2 tsp of coriander powder, 2 tbsp of sesame seeds, and 3 tbsp of crushed peanuts, mix well, and roast for 1 minute. After a minute, add chopped coriander and cook on low flame for 2-3 minutes.
After roasting a little, add the prepared batter and a little lemon juice, stir continuously, and cook. Next step: take a plate, grease it with oil, and spread the sesame seeds into it.
After the mixture starts leaving the pan, turn off the flame, transfer it to the greased plate, and spread well. Next step: let it rest for 25 minutes.
After 25 minutes, check the Kothimbir Vadi mix and de-mold it on a platform. Next step: cut the Kothimbir Vadi into small pieces.
