RAS MALAI RECIPE

– Cauliflower – 1/2 Piece – Carrot – 1 – French Beans – 5 to 6 Piece – Broccoli – 1/2 cup – Capsicum (Red,Yellow & Green) – 3 Piece – Mushroom – Chopped Green Chili – 3 – Garlic – 10 to 12 Piece – Ginger – 1 piece – Spring Onion  – Olive Oil – 1 tsp – Water – 1 Liter – Bay Leaf – 3

– Black Peppercorns – 8 to 10 – Oil – 2 tbsp – Chopped ginger – 1 tbsp – Chopped Garlic – 1 tbsp – Chopped Green Chilli  – Salt as per Taste – Black Pepper Powder – 1 tsp – Soya Souce – 1 tbsp – Red Chilli Sauce – 1 tsp – White Vinegar – 1 tsp – Sugar – 2 pinch – Corn Starch – 1 tbsp – Water – 2 to 3 tbsp – Spring Onion  – Chopped Coriander

Step 1

To make the perfect hot and sour soup, take a carrot, broccoli, mushrooms, cauliflower, capsicum, and french beans and finely chop everything.

Next step: place a pan on flame, add one teaspoon of oil, and heat well. Next step: add the remaining skin and stem of all vegetables and sauté well.

Next step: add finely chopped garlic and ginger and roast well. Next step: add 1.5 litres of water, three bay leaves, and 6-7 peppercorns, mix well, and boil it for 8–10 minutes with a closed lid.

After 8 minutes, turn off the flame and filter the prepared soup stock.

Next step: place a pan on flame, add two tablespoons of oil, and heat well. Next step: add 1 tbsp of chopped ginger, 1 tbsp of chopped garlic, and 1 tbsp of chopped green chilli and roast well on high flame.

Next step: add all the chopped vegetables, roast well on medium flame and stir continuously. After cooking the vegetables, add the prepared soup stock and mix well.

Next step: add salt per taste, one teaspoon of pepper powder, one teaspoon of soy sauce, one teaspoon of chilli sauce, and one teaspoon of white vinegar, and mix everything well.

Next step: add two pinches of sugar, mix well, and boil for 4-5 minutes. After 4-5 minutes, little by little, add one tablespoon of corn starch slurry and mix well.

Next step: turn off the flame, garish it with chopped spring onion greens and chopped coriander, and mix well. Now your perfect mix vegetable Hot and sour soup is completely ready, and you can enjoy it.
