To make the perfect Angoori Rasmalai, place a pan on flame, add 1 liter of toned milk, and boil.
Next step: take a bowl, add two tablespoons of white vinegar and two tablespoons of water, and mix well. After the milk starts boiling, turn off the flame and stir consistently for two minutes.
After 2 minutes, little by little, add the vinegar mix and mix well. After the milk curdles, add 1–1.5 cups of cold water and mix well.
Next step: filter the curdled milk with the help of a cloth. Next step: gently squeeze the cheese and leave the cheese for some time.
Next step: place a pan on flame, add 1 liter of milk, and boil on high flame. After a boil, add chopped almonds, pistachios, saffron strands, and 1/2 teaspoon of cardamom powder, and mix well.
After 3–4 minutes, add five tablespoons of sugar, mix well, and cook. Next step: add two pinches of saffron food colour and mix well.
After the milk turns medium thick, turn off the flame and transfer it into a bowl. Next step: transfer the prepared cheese to a plate and gently knead with the help of your palm until it turns smooth.
Next step: add one tablespoon of corn flour, knead well, and prepare a dough. Next step: prepare small marble-sized balls with the dough.
Next step: place a pan on a flame, add 250 grams of sugar and 5–6 cups of water, and boil well. After the sugar melts and the syrup is boiling, add the prepared Rasmalai balls and cook on a high flame.
After 5 minutes, close the lid and cook well for 6-7 minutes. After 6-7 minutes, transfer the prepared balls into cold water and let them rest for some time.
After some time, squeeze all the balls and transfer them to a bowl. Next step: pour the prepared Rabri on the Rasmalai balls and let them rest for 4-5 hours.
