होटल जैसी टेस्टी सांभर की सीक्रेट रेसिपी अब बनाये घर पर बहुत ही जल्दी – Sambar – Hotel Sambar Recipe

Toor dal/arhar dal/split pigeon pea – 1/2 cup
Water – 3 cups
Turmeric powder – 1/2 tsp
Chopped beans
Chopped carrot – 1
Drum stick
Bottle gaurd – 4 tbsp
Brinjal – 1
oil 2 drops

Step 2 ingredients
Oil – 2 tbsp
Mustard seeds – 1 tsp
Urad dal/black gram – 1 tsp
Curry leaves
Asafoetida – 2 pinch
Dry Red chillies – 3
Finely chopped onion – 1
Garlic cloves – 3-4
Finely chopped green chilli – 2
Finely chopped tomato – 2
Onion petals
Turmeric powder – 1/4 tsp
Red chilli powder – 1 tsp
Tamarind pulp – 3 tbsp
Jaggery – 1 tbsp
Sambar masala – 2 tbsp
Salt as per taste

½ Cup Coriander Seeds / Dhaniya Seeds
2 Tbsp Chana Dal
2 Tbsp Toor Dal
2 Tbsp Urad Dal
1 Tbsp Cumin Seeds / Jeera
¼ Tsp Methi / Fenugreek Seeds
½ Tsp Mustard Seeds / Rai
Some Curry Levees
1 Tsp Black Pepper / Kali Mirch
15 Whole Kashmiri Red Chilli / Lal Mirch, Adjust To Your Spice Level
1 Tsp Turmeric Powder/ Haldi
1/2 Tsp Hing / Asafoetida
3 Pcs Cinnamon

  • To make hotel style sambar.
  • Wash and soak dal for 30 mins and drain water.
  • Take a pressure cooker add dal,3 cups of water,Turmeric powder,Chopped beans,Chopped carrot,Drum stick,Bottle gaurd,Brinjal,.
  • Place the vegetable bowl in the pressure cooker.
  • Add 2 drops oil in dal to avoid water oozing out.
  • cover the cooker & cook for 4-5 whistles on medium flame.
  • Next step.
  • In kadhai add oil let it heat.
  • Add Mustard seeds,Urad dal/black gram,Curry leaves,Asafoetida,Dry Red chillies and fry.
  • Add onions and saute.
  • Add garlic cloves,Finely chopped green chilli and fry.
  • Add Finely chopped tomato and saute until mashy.
  • Add Onion petals and fry.
  • Add Turmeric powder,Red chilli powder and mix well.
  • Add Tamarind pulp and cook for 1 min.
  • Add jaggery and mix well.
  • Add cooked veggies and mix well.
  • Add Sambar masala and mix well and cook for 2 mins.
  • Add cooked dal and mix well.
  • Add water if required.
  • Add Salt as per taste and mix well.
  • To make sambar powder
  • In a pan add ½ Cup Coriander Seeds and roast well and keep aside.
  • Add Chana Dal,Toor Dal,Urad Dal,Cumin Seeds,Methi / Fenugreek Seeds and roast well and kep aside.
  • Add Mustard Seeds,Some Curry Leaves,Black Pepper,Dry Red Chilli,Hing /Asafoetida,Cinnamon and roast well.
  • Keep aside and let it cool.
  • Transfer into jar add Turmeric Powder/ Haldi and make a fine powder.
  • Sambar masala is ready to use.
