Materials
- Spinach – 2 bunch
- Chopped Onion – 3 pcs
- Chopped Garlic – 6 cloves
- Salt as per Taste
- Kashmiri Red Chilli Powder – 2 tsp
- Cumin – 1 tsp
- Turmeric – 1/4 tsp
- Imly Water
- Water Oil – 2 tbsp
- Mustard Seeds – 1 tsp
- Split Bengal Bram – 1 tsp
- Black Gram – 1 tsp
- Asafoetida – 1/4 tsp
- Curry Leaves Garlic – 7 cloves
- Red Chilli – 2 pcs
- Chopped Coriander
Instructions
- Take 2 bunches of spinach (palak), wash them thoroughly, and finely chop the leaves.
- In a grinding jar, add 2 chopped onions, 6-7 garlic cloves, salt as per taste, 2 teaspoons of Kashmiri red chili powder, 1 teaspoon of cumin seeds, 1/4 teaspoon of turmeric powder, tamarind water, and a little water. Blend into a smooth paste and set aside.
- Place a kadhai on flame, add 2 tablespoons of oil, and heat well.
- Add 1 teaspoon of black gram (chana dal), 1 teaspoon of urad dal, 1/4 teaspoon of asafoetida, curry leaves, 6-7 whole garlic cloves, and 2-3 dry red chilies. Roast well until aromatic.
- Add the prepared masala paste to the kadhai and cook on medium flame while stirring continuously until the paste thickens and releases oil.
- Pour 1/2 cup of hot water into the kadhai, mix well, cover with a lid, and let the gravy simmer.
- Add the chopped spinach to the gravy, mix well, and cook for 2 minutes on medium flame.
- Cover the kadhai again and let the sabji cook for another 3 minutes on low flame.
- Check the consistency, garnish with freshly chopped coriander leaves, and serve.
