Materials
- Chopped Carrot – 1

- Green Peas – 1/2 cup
- Chopped Potato – 1
- Chopped Capsicum
- Onion – 1
- Paneer – 100 gm
- Oil – 3 to 4 tsp
- Salt as per Taste
- Kashmiri Red Chili Powder
- Turmeric Powder – 1/4 tsp
- Salt as per Taste
- Oil – 2 tbsp
- Bay Leaf – 1
- Dried Red Chili – 2
- Clove – 2
- Cinnamon Stick
- Black Pepper – 4 to 5
- Cardamom – 2 to 3
- Cumin Seed – 1 tsp
- Chopped Onion – 2
- Ginger – 1 tbsp
- Garlic – 1 tbsp
- Gram flour – 2 tbsp
- Kashmiri Red Chili Powder – 2 tsp
- Coriander Powder – 1 tbsp
- Cumin Seed – 1/2 tsp
- Chaat Masala – 1tsp
- Kitchen King Masala – 1 tbsp
- Water – 3 to 4 tsp
- Tomato – 2
- Salt as per Taste
- Water – 2 tsp
- Curd – 1/2 cup
- Hot Water
- Kasoori Methi – 1 tsp
- Ginger Julienne
- Green Chili- 2
- Chopped Coriander
- Butter
Instructions
- To make the perfect Dhaba-style Mix Veg Sabji, place a pan on flame, add one tablespoon, and heat well.
- Next step: 1 chopped potato and roast well for 1-2 minutes.
- After 1-2 minutes, add one chopped carrot, one chopped cauliflower, 1/2 cup of green peas, one chopped capsicum, and one chopped onion. Mix well and roast until the vegetables are cooked to 70–80%.
- Next step: add salt as per taste, a little red chilli powder, and 1/4 teaspoon turmeric powder; mix well; and cook for 3–4 minutes.
- After 3–4 minutes, turn off the flame and transfer all the vegetables to a plate.
- Next step: add paneer cubes to the kadhai, sprinkle some salt, and roast a little until golden.
- After the paneer turns golden, transfer the paneer to a plate.
- Next step: place a Kadhai on flame, add two tablespoons of oil, and heat well.
- After the oil is hot, add one bay leaf, two cloves, one cinnamon stick, 4-5 peppercorns, 2-3 green cardamoms, and one teaspoon of cumin seeds, and roast a little.
- After roasting a little, add two finely chopped onions and roast on a medium-high flame until pink.
- After the onion turns pink, add one tablespoon of coarse ginger and one tablespoon of coarse garlic, mix well, and roast.
- Next step: add two dry red chillies, mix well, and roast on low flame.
- Next step: take a bowl, add 2 tbsp of gram flour, 2 tsp of Kashmiri red chilli powder, 1 tbsp of coriander powder, 1/2 tsp of cumin powder, 1 tsp of chaat masala, and 1 tbsp of kitchen king masala, and mix everything well.
- Next step: add 3–4 tablespoons of water and prepare a paste.
- Next step: add the prepared paste to the kadhai, mix well, and roast.
- Next step: add tomato paste of two tomato, mix well, and cook.
- After the gravy releases the oil, add salt as per taste, two tablespoons of water, and mix well.
